Until now, the methods of sensory evaluation developed in Ecole Nationale des Arts et Industries Textiles(ENSAIT)were carried out by using some programs isolated in Matlab. In each industrial application, we have needs for an important human operational intervention. So it is necessary to establish such a system.The key of my Master’s thesis is to design and develop a computer-aided system for the sensory evaluation of the textile products, in order to help the companies to analyze the consumers’ evaluation data, and to anticipate the needs of the market.Firstly, a detailed study has been done for a decision-making system for textile comfort. A one-dimensional and multi-dimensional framework is created of the sensory evaluation and decision making system for textile comfort. A multi-dimensional sensory evaluation system is a general evaluation for human feeling to all these aspects: the color, the surface, the touchéand the fabric style. A one-dimensional sensory evaluation system is an evaluation for human feeling to one of these aspects.Secondly, according to basic study of the existing educational software IlobEval, the software of the sensory evaluation SensoEval has been designed. Two similar softwares have been compared in order to use the database structure from IlobEval to establish a database of a sensory evaluation system SensoEval.Finally, in the data analysis module of the Design oriented sensory evaluation(DOSE), in order to test the quality of the evaluation team and to evaluate the quality of the vocabulary used for the product tests, the formula of calculating the distance and sensitivity has been designed.SensoEval is software intended for the supervisors or organizers of the panels. It offers tools which enable them to manage the procedure of sensory evaluation and to analyze the results of their panelists.It is based on the one hand on the concept of descriptor: a descriptor is a concept used by the panelists in a project of evaluation to describe a specific sensory aspect of the product. SensoEval makes it possible to manage these descriptors in a structured way, in the form of trees of descriptor. One can thus define with precision the whole of the concepts used at the time of a project.In addition, SensoEval introduces the concept of evaluation: the fact connecting one or more panels to the products. It makes it possible to manage the results of the panelists on the descriptors during an evaluation, and of offer moreover of the tools for analysis of these results.It is possible for the supervisors to manage the notes of descriptors according to various products. And the results are saved in the descriptors’ trees that they defined.This system makes it possible to gather all the programs carried out in a convivial structure, to automate to the maximum of the human interventions in the procedure of evaluation and to provide a comprehensible interface to the users of the company.With increasingly fierce competition on the international market, enterprises are more concerned about whether their products can meet the actual needs of consumers, or whether they can increase the market share. In this context, sensory evaluation system can be used for an enterprise to develop their products market, and to be a quantitative and qualitative analysis tool for the feeling of their consumers.The textile comfort decision-making system mentioned in the ChapterⅡcontains many modules. To complete these modules and to make enterprises use of the Decision System for their existing products in order to make a market analysis and to develop the new products to meet more demands of the consumers are still the worthy subjects of research for the future.
