Collichthys niveatus is the important saltwater fish of consumers because of its high protein content, better nutritional value and good taste. However, fish is susceptible to corruption due to the high content of the water, so the shelf life is short. It is very necessary to find a way to extend the shelf life of fish which use effectively preservation techniques. Slurry ice as a new preservation technology with unique advantages is valuable to have a further exploration. This paper intends to combine slurry ice with ozone to treatment Collichthys niveatus, in order to play their respective advantages in keeping quality of Collichthys niveatusand improve the shelf life.In view of the above-mentioned facts, this paper use Collichthys niveatus as the object. Firstly, analyzes the basic nutrients of Collichthys niveatus, and determined the best concentration of ozone-slurry ice measuring by the physical and chemical indicators. Secondly, evaluate the effects of different storage condition on Collichthys niveatusquality, in order to provide theoretical basis for the effect of ozone-slurry ice in keeping of Collichthys niveatus quality. Finally, the effects of ozone-slurry ice biochemical and functional characteristics of muscle protein from Collichthys niveatus were studied based on the deformation and degradation of protein. The main conclusions as following:1, The results showed that the essential nutrients of Collichthys niveatus, moisture content was79.94±4.15%, crude protein content was16.88±1.32%, crude fat content was1.82±0.08%, ash content was1.21±0.08%, total sugar content was0.15±0.014%. Using the different concentrations of ozone-slurry ice Omg/L、0.41±0.03mg/L,0.82±0.04mg/L,1.26±0.06mg/L to treatment the Collichthys niveatus, according to the changes of the microbial, POV value, TVB-N value, pH value and the color that determined the ozone concentration of0.82±0.04mg/L was the most cost-effective treatment. Not only can extend the shelf life, but also can maintain the Collichthysniveatus with better quality.2, At2℃ice-temperature storage, the changes of the sensory, microbiological, physical and chemical indicators about the Collichthys niveatus which controlled by the different technique. It is show that compared with the control group which treated by flake ice, the slurry ice and ozone-slurry ice could delayed the sensory quality deterioration, inhibited the increase of TVC, kept at the relative low TVB-N, pH, TBA and POV values and enhances hardness and maintains springiness. The results show that the ozone-slurry ice group was good preservation effect according the better physical and chemical parameters. Compared with storage in flake ice, slurry ice alone and ozonized-slurry ice prolonged the shelf life for about7d and9d, respectively.3, According to the changes of the salt-solubilities, ATPase activities, SH contents, the microstructure of the muscle and the SDS-PAGE, the result show that the slurry can affect the Collichthys niveatus muscle proteins and biochemical characteristics significantly. And the drop rate from low to high which was ozone slurry-ice, slurry ice and flake ice respectively. Combined with the microstructure of the muscle and the SDS-PAGE, the experiment result indicates that slurry ice especially ozone slurry ice can alleviate the proteins from degradation and denaturation, inhabit the deterioration of muscle tissue structure and muscle texture soften and keep the protein structure from damage.
