This paper studies the physicochemical influence of neutral electrolyzed water indifferent electrolytes, the stability of electrolyzed water available chlorine during thestorage and the corrosive action on metals; By studying the culture of food bornemicroorganisms and the artificial contamination of aquatic products byprocessing apparatus, the sterilizing effect of the neutral electrolytic water was observed bytraditional bacterial culture method and scanning electron microscopy techniques. Bytreating mackerel in different ways with neutral electrolytic water, the ACP activity infish and biochemical indicators of mackerel during storage were observed to provide thebasic data of neutral electrolyzed water in the frozen chub mackerel for processingapplications, and to explore ways to grantee security and efficiency of the quality andsafety of aquatic products. The main research results are as follows:(1) The physicochemical properties produced by different electrolyte are different,while the Cl-scale in mixture effect pH value; Neutral electrolyzed water during storageand the stability of available chlorine of electrolyzed water was proportional to the pHvalue, Neutral electrolyzed water is stable for a certain time before opening can fullydissolve a small amount of overflow chlorine, improving the storage performance of theelectrolyzed water; That corrosion of metals with neutral electrolyzed water is small。(2)In a certain range of the concentration of available chlorine, the sterilization effectwas in proportion to the concentration of available chlorine. The sterilization effect ofneutral electrolytic water was inferior to strong acid. Microbial cells were observed byscanning electron microscopy and it is found that neutral electrolyzed water can alter cellmorphology.(3)After the processing equipment was contaminated, with the availablechlorine concentration in neutral electrolytic water being68.4mg/L, Staphylococcusaurous, Vibrio parahaemolyticus, E. coli colonies as three microorganisms were undercontrol to40CFU/cm2or less within2minutes. With concentration increasing to140.02mg/L, basically all the bacteria were killed. Within30s, neutral electrolyzed water canreduce the number of viable microbial contamination2.5log10CFU/mL from hands to lessthan1log10CFU/mL, tasteless and non-irritating to the skin. Analysis of the electronicnose system can identify the same smell chlorine concentration electrolytic water with aneutral solution of sodium hypochlorite. (4) When the concentration of neutral electrolyzed was about60.10mg/L, ACPactivities of fish cleaned by hydrostatic water and dynamic water were reduced byapproximately2.902and2.476respectively, with the concentration increased toapproximately84.20mg/L, results showed ACP activities reduced to3.141and3.022,indicating that neutral electrolyzed water can inhibit the activity of ACP in fish withpositive coefficient between chlorine concentration in neutral electrolyzed water and thedegree of inhibition increases. Phosphatase activity in fish was influenced in the dynamicwater more than the hydrostatic water cleaning method. Neutral electrolyzed watercontaining K+, Na+, Mg2+metal ion has similar effect on Phosphatase activity in fish. Thedegree of inhibition of neutral electrolyzed water containing Ca2+on the activity ofACP was significantly higher than the others; Cold Temperature Storage of fishdemonstrated the lowest degree for ACP activity inhibition.(5) The total number of colonies of microorganisms and TVB-N value indicatortrends are similar, the neutral electrolyzed water better preserved than the fresh water aftertreatment, and post-treatment preservation effect of neutral electrolyzed ice blocks is mostsignificant (P <0.05);On the11th day, test of the hardness and elasticity showed leastdecrease in Group M1, only9/13and1/3of that in the control group; L*and a*valuesdid not change significantly (P>0.05), b*values increased with storage time; Electronicnose system can distinguish volatile odors among the various groups of fish. It is provedthat neutral electrolyzed water ice is the most effective method in mackerel storage.
