Moisture content affect the storage quality and time of rice directly,it is a criticalcontrol factor of rice during storage process.The problem of short-term storage ofhigh moisture content rice is urgently needed to resolve.Optimize the conditions ofUV irradiation,ozone fumigation and propionic acid teatment, divided The indica ricewhich original water content is16%into four groups:the first group is the controlgroup without any treatment;the second group is ultraviolet radiation group which usethe short-wave ultraviolet light irradiated rice for50minutes;the third group is ozonefumigation group which was fumigated by200(ug/m3) concentration of ozone for3hours;the fourth group is prppionic acid treatment group which add0.1%concentration of prppionic acid in to the rice and mixed evenly. These four groupsof rice were loaded into the oxygen concentration of2%,5%and21%of the sealedcontainer,then put them into the thermostatic climate incubator which temperaturewere the10℃,20℃and30℃,then analog storage for180days.Detected the fattyacid value,sugar content,electrical conductivity and pasting properties every30days.The main results are as follows:(1)The influence of temperature on the quality of high-moisture rice:theinfluence of temperature on the rice fatty acid value,sugar content and electricalconductivity is extremely significant,the higher the temperature,the fatty acidvalues,sugar content and electrical conductivity have increased faster;The peakviscosity,hot vcicosity and final viscosity of rice gradually increased with storagetime,the storage temperature impact is extremely significant;the breakdown value ofrice gradually decreased with storage time,the the storage temperature impact issignificant on breakdown value but not signifcant on setback value.Low temperaturecan inhibit the speed of aging of the rice.(2)The influence of oxygen concentration on the quality of high-moisturerice:under the conditions of high temperature and high moisture,the influence ofoxygen concentration on the rice fatty acid value is extremely significant and on thesugar content is extremely significant,the lower the oxygen concentration,the the fattyacid values and sugar content have increased slower.the influence of oxygenconcentration on the electrical conductivity had no significant effect;Different oxygenconcentration had extremely significant effect on peak viscosity,breakdown value andsetback value of rice,but had no significant on the final viscosity and hot viscostiy.(3)The influence of UV irradiation on the quality of high-moisture rice:the effect of UV irradiation inhibit the increase of sugar content of the rice is the best,but it hasa certain role in promoting on the electrical conductivity of rice;under the conditions5%and21%oxygen concentration of30℃,UV irradiation is the best way of all thefour treatment in inhibit the increase of fatty acid values of rice;the influrence of UVirradiation had significant effect on pasting properties,the eating quality of the rice ofUV irradiation group had been inhibited during the storage time.(4)The influence of ozone fumigation on the quality of high-moisture rice:ozonefumingation treatment had a significant inhibition on aging of rice,under the conditionof30℃, it has the maximum effect in pasting prprerties of rice;the influence of ozonefumigation had significant effect on fatty acid values and sugar content,and miminumimpact on electrical conductivity.(5)The infulence of propionic acid on the quality of high-moisture rice:theinfluence of propionic on the rice fatty acid value and sugar content is extremelysignificant inhibition,but it can also incease the electrical conductivity of rice and hadno infuence on eating quality.
