Study On Production Status And Development Countermeasures Of Hunan Province Prepared Hunan Foods

Starting from the definition of prepared foods and the characteristics of their classification, this paper introduces the conditions of prepared foods processing technologies abroad and home especially in Hunan province.Taking the producing processes of three kinds of typical Hunan prepared foods for exmpale, the paper discusses the importance of quality control of the prepared foods of Hunan as well as the utilization of the HACCP system during the production process. The paper also discusses the significance and advantages of the development of Hunan prepared food industry by analysing the actual situation of two Hunan prepared food producers and also predicts the development trends of this industry in Hunan so as to set up theoretical and practical guidance for the prosperousness of the industry in Hunan.
