Abstract:Bacon is a traditional flavor Chinese food. Nitrite are used to produce bacon color and flavor, act as microbiological preservative and improve quality. Excessive consumption of nitrite can cause cancer and methemoglobinemia, deadly serious. At present, excessive nitrite has become the main security problems that exist in the meat product processing. This paper proposed a new method of nitrite degradation.The feasibility of irradiation degrade nitrite residues in bacon were researched. The main results are as follows:1:Established nitrite solution degradation model by irradiation. The different radiation dose, nitrite initial concentration, Vc concentration and NaCl concentration on nitrite degradation rate in this model were investigated. The results indicated:The nitrite concentration in nitrite solution can be reduced significantly by irradiation. The relationship between nitrite residue and irradiation dose can be described by the cubic equation model:Y=-9.236X3+0.742X2-0.029X+50.140. Initial concentration of nitrite is negatively correlated with degradation rate, Vc concentration promote irradiation degradation of nitrite, NaCl has inhibited the irradiation degradation of nitrite.2:Established nitrite meat degradation model by irradiation. The effect of nitrite irradiation degradation effect by irradiation dose and moisture concentration were researched. Established quadratic multinomial regression model in the ground pork as follows: Y=+91.56-2.68X1-3.63X2-2.26X3+0.69X1X2+0.57X1X3-0.044X2X3-3.66X12-0.22X22-0.95X32. the major influence factors of irradiation degradation of nitrite were:moisture concentration>irradiation dose>Vc.3:Through the analysis of nitrite residue after irradiation, certificated that it has certain degradation effect on nitrite by irradiation. It has the feasibility to degrade nitrite in bacon by irradiation. At the same time, the irradiation can effectively kill the mold and the total number of bacteria in the bacon; has a little influence on moisture concentration; change color obviously and produce irradiation flavor under high doses. 4:Determined nitrate nitrogen and ammonia nitrogen concentration in the nitrite solution which under2kGy and10kGy dose, It increased to some extent and proved that irradiation triggers the REDOX reaction of nitrite. Preliminary confirmed the radiation degradation mechanism of nitrite. Lay the foundations for further studies of mechanism study.
