Cyclodextrin derivatives have a wide range of research and application in the fields of the food technology and the biomedical materials. Carotenoids embedded by cyclodextrin derivatives has potential application value, which not only increases the water-soluble of carotenoids,but also enhances the stability of carotenoids.In this paper,the following β-cyclodextrin derivatives were synthesized,which are used to embedding the capsanthin and lutein, and their embedding properties were studied.The alkyl glycidyl ether is prepared from acyclic alcohol and epichlorohydrin in the presence of tetrabutylammonium bromide catalyst. To choose sodium hydroxide solution as the environmental media, subsequent procedure was conducted with alkyl glycidyl ether and β-cyclodextrin to produce mono substituted β-cyclodextrin derivatives. The product’s structures were proved by the FTIR,1H NMR and TGA.The allyl glycidyl ether was obtained in an alkaline medium using allyl alcohol and epichlorohydrin as raw materials. Subsequent procedure was conducted with the allyl glycidyl ether and β-cyclodextrin, product was crosslinked through a initiator ammonium persulfate in the nitrogen protection. The product’s structures were proved to be proved by means of the FTIR,1H NMR and TGA.The β-cyclodextrin esters were obtained through catalyst DCC and DMAP using stearate and β-cyclodextrin as raw materials. The product’s structures were proved by the FTIR,1H NMR and TGA.The CMC of the β-cyclodextrin derivatives were measured by the surface tension method,the results showed that6-β-cyclodextrin crosslinked polymer has the lowest CMC(64.39mg/L).Respectively to paprika oleoresin and lutein as the embedded objects, through theultrasonic vibration for β-cyclodextrin and its derivatives of embedding complex,explores the embedding ratio and protection performances. The results showed that the embedding ratio of β-cyclodextrin derivatives have a greatly increased than p-cyclodextrin,2-β-cyclodextrin crosslinked polymer has the max embedding ratio(90%). At the same time,the β-cyclodextrin derivatives complexes also greatly improved the stability of paprika oleoresin.
