On the basis of a large number of documents, with practices with Changzhi Yunhai Meat Foreign Trade Co., Ltd,this paper established a HACCP system which is more scientific, complete and applicable to exports companies of frozen rabbit meat. Through the careful "hazard analysis"(HA) of the production process of frozen rabbit meat, it established six critical control points(CCP):meat rabbit’s breeding; meat rabbit’s checking; visceral testing; the split room’s temperature controlling,;the metal detector’s monitoring and quick frozen temperature’s controlling. Then it established the critical limits (CL) to eliminate or reduce these harm. The domination of the key control points can ensure the quality and safety of the exported frozen rabbit meat of Yunhai Meat Foreign Trade Co. Meanwhile, the paper set up the program on monitoring、rectifying a deviation, verifying and record keeping of these key control points, thus the complete HACCP system of the exported frozen rabbit meat established.This study is a first attempt in establishing and applying the HACCP system on the process of the frozen rabbit meat’s production, which is aiming for the theoretical support to the production of the exported frozen rabbit meat.lt is also provided reference for the establishment of the HACCP system in the production process of other types of meat products. |
