This article mainly studies that the effects of different fresh-keeping bags and varioussilicon gum film window sizes and ST preservative and pepper pedicel on attributes ofYugan pepper were investigates. The parameters were studied, including rot rate, water loss,respiration rate, vitamin C, MDA, POD, CAT, which provided theoretical bases for thestorage of Yugan pepper. The result shows that:1. Compared with ordinary packing bag and PVC packing bag, the storage quality ofpepper in silicon window bag is better. During storage, the rot rate of pepper in siliconwindow bag is always lowest. After28days, the rot rate of contrast group is11.7%, whilethe rot rate of silicon window bag group is6.1%. The analysis shows that the rot rate ofpepper in different fresh-keeping bags have significant difference(P﹤0.05). On the whole,silicon window bag can effectively reduce the rot rate. Inhibit the respiration rate. Reducethe loss of Vc and protein and chlorophyll. Decrease the accumulation of MDA. Inhibit theincrease of POD activity and maintain higher CAT activity.2. The best silicon gum film window sizes is100cm2for the storage of3kg. Duringstorage, the rot rate of100cm2group is always lowest. The analysis shows that the rot rateof pepper in various silicon gum film window sizes have significant difference after36days(P﹤0.05).The rot rate of25cm2group is11.1%,while the rot rate of100cm2groupis8.4%. On the whole,100cm2silicon window bag can effectively reduce the rot rate.Inhibit the respiration rate. Reduce the Vc loss. Protecte cell membrane.Inhibit the increaseof POD activity and protect CAT activity.3. The ST can prolong the storage period of pepper and maintain the quality of peppereffectively. During storage, the rot rate of ST group is lower than contrast group. After32days, the rot rate of contrast group is8.16%. But the rot rate of ST group is only1%. After42days, the contrast group has no value. But the rot rate of ST group is only9.4%. Theanalysis shows that the rot rate of ST group and contrast group have significantdifference(P﹤0.01). On the whole, ST can effectively reduce the rot rate. Inhibit therespiration rate.Delay senescence. Reduce the Vc loss. Protect CAT activity.4. Cut pedicle can effectively reduce the rot rate. Inhibit the respiration rate.Decreasethe accumulation of MDA. But the pepper pedicle can not be too short. As0.2cm pedicle istoo short to the disease occurs in storage period. So1cm pedicle is more conducive forpepper storage.5. Compared with only process pedicle with ST, the quality of process fruit andpedicle with ST is better. After42days, the rot rate of only process pedicle group is27.7%,while the rot rate of process fruit and pedicle group is9.4%. The analysis shows that the rotrate have significant difference(P﹤0.01).
