In this paper, the antioxidant effect of high-voltage electric field and antioxidant on oil were studied, Through the comparison of optimal parameter of peroxide value,we found the best condition of high-voltage electric field treatment intensity and processing time and selected the best optimal antioxidant combination on inhibit oil oxidation.The major findings of this experiment are as follows:The test on the antioxidant effect of high-voltage electric field on oil showed that high-voltage electric field treatment intensity and processing time have a significant effect on oil. Compared with the effect of high-voltage electric field on rapeseed oil and soybean oil tests showed that:refining soybean oil>crude rapeseed oil>refining rapeseed oil>crude soybean oil.On the combined antioxidant effect of antioxidant and electric field on oil experiment, the order of antioxidant which influenced activity of antioxidant on the two different oil with high voltage as follows:TP> TBHQ> BHA> BHT> VE. The best combination of antioxidant with high-voltage electric field is Tea polyphenols both the crude rapeseed oil and the crude soybean oil.The order of antioxidant activity by high-voltage electric field and composite antioxidants on crude soybean oil is:TBHQ+PA>TP+PA>TP+CA>TP+VC>TBHQ+CA>TBHQ+VC.Comparing with several kinds of composite antioxidant, the result showed that the best combination of antioxidant is high-voltage electric field with TP and PA on crude rapeseed oil.
