If the quality of agricultural products can not adapt to the demand of the market, we must find a way out from the transformation of the agricultural structure. And we should seek the best agriculture industry chain organizational model to meet the consumer demand for the quality of agricultural products. Reasonable agriculture industry chain organizational model has the great significance for developing the agricultural industrialization and raising the quality level of agricultural products.In this paper, we based on the literature review and analysis of issues related to the quality of our agricultural products, industrial chain and agricultural industrial chain, use the SCP analysis to research the enterprise behavior in the agriculture industry chain in two situations of quality choose when the quality of agricultural products as exogenous variables and endogenous variable, according to enterprise behavior investigation its market performance and then get the best agriculture industry chain organizational model. At the same time, we use the method of Shapley value to distribute the alliance income of the agriculture industry chain, combining with the game analysis method, considering the stability of the agriculture industry chain organizational model by the enterprise profit and the quality of agricultural products in the agriculture industry chain, seeking the best agriculture industry chain organizational model, providing the basis and theoretical support for the optimization and development of the agriculture industry chain organization model.The research has found that from the enterprise short-term and long-term behavior angle, and under the two situations of quality choose when the quality of agricultural products as exogenous variables and endogenous variable, the choices of agriculture industry chain organizational model based on different market performance are different; The optimum equilibrium strategic option of the enterprise based on revenue performance in the agriculture industry chain is integration agriculture industry chain organizational model, but this model is not stability because it can not guarantee the farmers and leading enterprises to achieve the maximization of individual income; The decentralized agriculture industry chain organizational model based on the quality optimal of high quality agricultural products and the parts of the cooperative agriculture industry chain organizational model based on the quality optimal of low quality agricultural products are also not stability because they cannot guarantee the farmers and leading enterprises to achieve the maximization of individual income, also cannot ensure get the biggest agriculture industry chain overall revenue.
