Research on the Strategic of Restaurants’Management in Closed MarketAny catering services are expected that they will have stable sources of customers, muchmore expected that the amount of their supplement won’t change too much which willhave stable employees , less expenses on the Human Resources accompany with large profitsand futuring of existence and development . But to the restaurants“closed market”located incommon universities and junior colleges which have clear classification of the level ofcustomers- the centralization of the age of customers , although these kinds of restaurantshave the advantages on the mentioned stability and majority of customers, but to thepopularity and conveniences on today’s Internet, social Webs, BBS, MSN which have thebenefits of rapid linking and huge expansion adds more actions of irrational resistanceswhich come from active and passive actions ; but the operators and the owners of these kindsrestaurants in the campus have certain pressure of the contracts and the profits/loss ofbenefits, more than this they should cooperate and combine with the polices and attitudes ofthe schools, and those above mentioned actions and process of thinking will blurred thefocus of questions which resulted in decisions could not be make correctly and rapidly andmake more conflicts due to the wagging of the policies.However what many policies of the benefits and weakness about the management ofrestaurants ( Da Shien Szu-Tu 2001 ) 10 ,but perhaps the restaurants of schools which belongto closed market can decrease and lower their developing, purchasing ,function policies…etc,increasing the variants of induction of the satisfaction of customers via pay more attentionpolicies of marketing and production; those mentioned variants including of attitude ofcooking, skills of cooking, selling price, qualifications of health…etc. So if you can make asequence of the variants by the judgement among the many influencing variants will helpowners or managers to clearly making the policies of management, manage restaurantseffectively, customers serving, more important is how to persuade the authority of the schools or certain organizations, make the cross confidence and belief in between,lengthened the contract finally.
