The song dynasty occupies an important position in the history of the tea industry in China.The production of tea in song dynasty was in rapid development, tea industry system which wasestablished by song dynasty was followed by the generations.T he tea of Jianzhou has alsoentered enter the development heyday in song dynasty, it has a significant impact on the teaproduction process and the method of drinking of Song Dynasty.At the same time, about the teaproducing areas of Jianzhou, the Government of The Song dynasty has implemented special teapolicies.So researching the tea of Jianzhou is very important, Given the focus on one aspect ofthe tea of Jianzhou in the past, the write systematically states the tea production, tasting of the teaand the policy of the rulers etc, in order to reveal a more comprehensive development of the teaduring this period. The text mainly divided into five parts:The first part is mainly to simply introduce the Geographical evolution and Geographicallandscape of Jianzhou.The landform of Jianzhou is “mountains and special, very high on”, Theunique topography provides good geographical environment for the tea of Jianzhou, also ladiesthe foundation for the famous of the tea of Jianzhou in the national.The second part backs the development of the tea before the song dynasty. Although thehistory books about the records of tea of Jianzhou in this period is not very systemic, Butthrough the history reviewing, Historical collection, still was able to sketch the Developmenttrack of the tea.The third part mainly discussed the production of the tea in the song dynasty. The paperfocuses on the research of the kinds of tea garden and its production process. Its productionprocess can be divided into: Go, and gathered the tea, Steaming tea,pressing tea,inquiry tea,made tea and baked tea, there are seven steps together. Each step has specific requirement. Thetea which produced in Jianzhou was into the development of the golden age in the song dynasty;its development is not divided with the strict request about production process.The fourth part studies the way of drinking. The drinking way of the tea was verymeticulous and over elaborates. The main pattern of the drinking way was Tea Fighting. Thissection focuses on the procedure of Tea Fighting, a standard of winning or losing of Tea Fightingand the tea sets which was used for Tea Fighting, the author also concrete analysis the influencewith Tea Fighting, and the reasons of the Tea art dying after the song dynasty.The fifth part made emphasis on the circulation of statehood tea.In this paper the problemmainly was studied from two aspects. First, the writer paid attention to the tea of Jianzhou whichwere as tributes, Especially famous the tea which produced in Beiyuan.The predecessorsresearched a lot about the tea of Beiyuan,and there are quite abundant historical dates. The writer introduces the tea of Beiyuan correlatively, then emphasizes on the flow of the tea which comesfrom Beiyuan, through the survey we found that, the tea has played an important role onimproving relations between song dynasty and the countries surrounding. Second, This articleconduct a study on private tea policy which the song dynasty took on the tea of Jianzhou,through the research we found that, because of variety and excellent quality, unique, and limitedproduction, the song dynasty rulers established special tea policy about the tea of Jianzhou.Throughout the song dynasty, the private tea of Jianzhou was almost Forbidden to takecommercial intercourse, most of time it was in the monopolistic condition.
