Gorgon euryale belonging to Nymphaeaceae Euryale Ferox Salisb, for annuals large aquatic herbaceous plants, Ordinates from China and southeast Asia, widely distributed in south China district and grows in lakes, ponds, beach and the ditch.Gorgon euryale is rich in nutrients, such as protein, carbohydrates,minerals and so on, which also can keep blood to tranquilize the nerves, the kidneys and fixing sperm, to wet the spleen, diarrhoea check sluggish etc. foreign studies have found that Gorgon euryale contain special active substances, which can effectively enhance the ability of myocardial oxygen, however, there has been no relevant literatures detailed study about medicinal indianmulberry specific care composition and care mechanism, as a result of lack of a reliable health care efficacy theory basis. so this paper, with gordon euryale from Suzhou and gordon euryale from Hongze as raw material, Study the flavonoid extract technology conditions, antioxidant activity, antibacterial ability and polyphenol oxidase properties and the results of the study are as follows:(1) The ultrasonic method extracting flavonoids of Gorgon euryale was an effective method for its using short time,and the optimum technological conditions was power at500W for about20min with the ratio of solid to liquid was1:20(w/v). Order of influence factors involved with extraction could be sorted as time, ratio of solid to liquid, power.(2) Flavonoid extract solution of gordon euryale from Suzhou and from Jinhu City could scavenge the free radical DPPH·,·OH and O2-and the effects increased with the concentration of black pigment, especially for the DPPH-, the molar ratio of DPPH· being0.075, which cleared50%DPPH-in2min. research also showed that they could inhibit oxidation of lard.(3) Flavonoid extract solution of gordon euryale from Suzhou and from Jinhu City had an inhibitory effect on E. Coli, Bacilus subtilis, staphylococcus aureus, Salmonella, vibrio, Acinetobacter baumannii, rhizopus, saccharomycetes, especially for Bacilus subtilis, staphylococcus aureus, saccharomycetes, vibrio.(4) Temperature, pH, substrate concentration and enzyme concentration had an great influence on the optimum PPO activity of gordon euryale from Suzhou and from Hongze. Fe3+and Fe2+had a stimulative effect on the enzyme activity. Ca2+of low concentration inhibited the enzyme activity.when the concentration reaching a certain value, the enzyme activity would been increased. finally, Citric acid, oxalic acid, ascorbic acid, EDTA, NaHSO3, Na2S2O3had a significant inhibitory influnce on the enzyme activity.
