Juglone is a new type of anticancerogen, which could be extracted from all parts of walnut tree, such as green peel of Juglans(GPJ), tree bark, etc. Most of the juglone on the market is synthetics and the price is very high. It would be of great value to the production of juglone if an effective and energy-efficient extraction technology could be established.The characteristics, pharmacological action and extraction method of juglone are summarized. Aqueous enzymatic hydrolysis extraction, nanaqueous enzymatic hydrolysis and enzymatic browning of fruit in the storage period are also presented. The reasons why GPJ becomes black during storage period and the amount of juglone decreased are enzymatic browning and brown stain increased during storage. The mechanism of GPJ’s browning is studied and it is confirmed that browning is caused by PPO preliminary. Thereby, to inhibit the activity of PPO can prevent browning effectively. It is confirmed that vacuum refrigeration, hygroscopic agent and pit storage is the best storage method.The extract method nonaqueous zymohydrolysis was built and the extraction theory was studied. All of the factors, which can influence the extraction ratio, are investigated. Parallel experiments confirmed the best process conditions and the proportion of enzyme vs GPJ ,cellulose vs GPJ, water vs extractant. Enzymolysis pH 4.8 and enzymolysis time 2 hours, then Microwave heat 6 minutes after enzymolysis. Here comes the result that the extraction ratio is 87%, the yield 0.21%, purity 92%.It is proved that the object is juglone by using IRand GC-MC to give quolitative analysis. It is certified that the content of juglone is 0.28% in the GPJ by using Spectrophotometry.The extraction ratio of the current technology is higher than the former one, with relatively rapid speed, simple equipment and easier operations. Therefore, it can be applied to industrial production.
