The purpose of this study was to assess the relationship between cooking oil fumeseffect and female gonad by epidemiology investigation and the chronic animal experiment.Methods1、Epidemiological surveyThe unified questionnaire on female reproduction was used, according to thereproduction occupational epidemiological method.152female chefs in communitieexposure to cooking oil fume (COF) were selected as exposure group and608womenexposure to non-COF were selected as control group by means of cluster samping.2、Subchronic animal experiment50Wistar female adult rats were randomly divided into five groups based on bodyweight,10in one group, all of the must be expose in COF56days continuingly. Accordingto how long they exposed, they are divided in to low dose group (0.5hours/day), themid-dose group (1hours/day), high dose group (2hours/day), extreme high dose group (4hours/day) and blank control group (don’t do any processing). From the43th day, the ratestrus cycle was begun to observe. After lasting fifty-six days serum, ovarian and uterusovarian wet weight and visceral index, uterus wet weight and viscera index were observedon estrus stage. The constituent ratio of the distinct follicle number on ovaries was observedwith the HE staining and the ultramicrostrure were observed with the radioimmunoassay.Meanwhile, the serum levels of sexualhormones were detected.Results1、Epidemiological surveyThe incidence of hypomenorrhea, high pressure syndrome during pregnancy,prematurebirth, natural abortion, congenital malformation,were increase significantly in the exposure group (P<0.05). There was no significant difference on the incidence of abdominal pain,sleepiness, insomnia, pregnancy anemia, hyperemesis gravidarum, post term birthbetween the exposure and the control (P>0.05).2、Sbuchronic animal experimentsThere was no significant difference on the weight between the exposure and the control,weight gain was higher than the control (p<0.05). There was no significant difference onovarian wet weight and visceral index between between the exposure and thecontrol(p>0.05). There was no significant difference on o uterus wet weight and visceral indexbetween between the exposure and thecontrol (p>0.05). proestrus stage of extremely highdose group are significantly shorter (p <0.05). The constituent ratio of primordial folliclein extreme high dose group is lower than that in control group (p<0.01). The constituentratio of atresic follicle in low dose group is higher than that in control group. The constituentratio of corpus luteum/albicans in extreme high dose group is higher than that in controlgroup (p<0.01). There was difference on ultramicrostructure of cell granule between theexposure and the control group。LH were decrease significantly in low dose group, and wereincrease significantly in extreme high dose group (p<0.01); P4were increase significantly inlow dose group (p<0.01); E2were increase significantly in low dose group and medium dosegroup, E2were decrease significantly in extreme high dose group (p<0.05).ConclusionThe incidience rate of menstrual aura, hypomenorrhea, high pressure syndrome duringpregnancy premature birth, natural abortion, congenital malformation of female were closelyassociated with exposures to COF. Under this experiment conditions, COF could short theproestrus stage, prolong metestyus stage, chang the number of follicular at all level,ultramicrostructure of cell granule and sex hormone levels. Therefore, COF has certain toxiceffect to female’s female gland.
