Objective: Study the technology Enteromorpha prolifera beverage with the functionof anti-type2diabetes technology. Study the effection of Enteromorpha beverage tothe glucose and lipid metabolism of type2diabetes rats glucose and lipid metabolism.Methods:1. The Enteromorpha beverage technologies(1) The main component: Enteromorpha polysaccharide, hawthorn, medlar, and otherauxiliary materials.(2) Processing of raw materials: Hot water extraction method wasused to extract the active ingredient of medlar, hawthorn, the optimization conditionsof hot water extraction method was chosen by orthogonal test, where the solublesolids content was used as an indicator.(3) Recipe: Enteromorpha polysaccharide wasused as the main component, the extraction of hawthorn and medlar and polyphenolswas added appropriately. Which consisted of beverage based fluid. The orthogonalexperimental design was used to confirm the formulation of beverage based fluid,sugar content and acidity. β-cyclodextrin was used to remove the fishy astringency.(4)Homogenization: Homogeneous conditions were determined by orthogonalexperimental design;(5) Sterilization: The parameters was selected by hot water bathemethod.2. The study of the Enteromorpha polysaccharide beverage to regulate glucose andlipid metabolism in type2diabetic ratsRats were feeding high-sugar, high fat diet and injected small doses of streptozotocin(STZ) to establish type2diabetic model; Enteromorpha drinks was gavaged type2diabetic in high, medium and low-dose. Daily food intake, water intake and body weight were recorded everyday. Fasting blood glucose was tested every week. Theoral glucose tolerance test (OGTT), fasting blood glucose (FBG) was tested at the endof four weeks. Blood serum total cholesterol (TC), triglyceride (TG), high densitylipoprotein (HDL), low density lipoprotein (LDL-C) content was tested after the ratswas killed. Antioxidant indexes in serum was tested and compared, which includeserum superoxide dismutase (SOD), glutathione peroxidase (GSH-PX in-Px) activityand malondialdehyde (MDA) content.Results:1. The Enteromorpha beverage technologies(1) The processing of medlar, hawthorn and other raw materials: wolfberry wasextracted as the time3h, temperature of70℃, solid-liquid ratio of1:40, hawthornwas extracted as the time3h, temperature of60℃, solid-liquid ratio of1:40.(2)Recipe: The proportion of base fluid was50%,8%sugar content, acidity0.15%,β-cyclodextrin dosage0.2%, in which the sensory properties was the best.(3)Homogeneous parameters: pressure35Mpa, temperature of60℃,3times.(3)Sterilization: Beverage achieved commercial sterility in85℃water bath for20mins.2. The study of the Enteromorpha polysaccharide drinks to regulate glucose and lipidmetabolism in type2diabetic rats.(1) General situation: Compared with model group, the rats of Enteromorpha drinksgroup were more activity, the symptom was relieved obviously.(2) Fasting bloodglucose and oral glucose tolerance test: The fasting blood glucose Enteromorphadrinks high, medium and low dose group rats sustained reductions during thegavaging time, fasting blood glucose of model group rats decreased less, whichremaining at about14mmol/l. The glucose tolerance of of Enteromorpha drinks groupwas better than model group.(3) Lipids: The content of TG, TC and LDL-CEnteromorpha drinks group was better than model group, in which the high doesgroup was the best.(4) Antioxidant index: The MDA content of the Enteromorphadrinks group rats was lower than model group, SOD activity was higher than modelgroup, the high dose group was the highest, the GSH-Px of the Enteromorpha drinks was better than model group.Conclusion:1. good flavor quality and stability Enteromropha beverage can be produced withEnteromorpha polysaccharide-based, hawthorn, medlar, and other materials.2. Enteromorpha polysaccharide-based beverage can be used to adjust the glucose andlipid metabolism in type2diabetic rats.
