This paper mainly systemic discussed the effect on meat quality of female cashmeregoat in house feeding and grazing fattening mode mainly from the muscle nutrients contentand physical-chemical indexes, and compared the meat quality between female goats andlambs, which provided a theoretical basis for reasonable arrangements to cashmere goats’fattening and constantly improved meat quality of cashmere goats.This paper included two parts.Trial1was conducted to study the effects of feeding model on meat quality offemale cashmere goats. Thirty eliminated female goats with similar body weight and agewere selected from Inner Mongolia White Cashmere Goat Breeding Farm for Trial group,and were fed for dry-lot fattening. House feeding female goats were fed according to thedesigned total mixed ration. Thirty female goats similar to experiment group were selectedfrom original farm for control group, and were for grazing. Fattening period was2months.At the end of the fattening trial,6female goats were selected from the each grouprespectively to slaughter.Trial2was conducted to compare meat quality of female cashmere goats to that oflambs. The experiment used a single factorial arrangement design, and a total of120goats with60female goats and60four-month-old castrated lambs were allotted to twotreatments groups (female goat group and lamb group), and with half grazing feeding andhalf house feeding in each group. The fattening period was3months for lambs, and2months for female goats. At the end of the fattening period,12goats with half grazingfeeding and half house feeding were selected from2groups respectively to slaughter.Under the condition of this experiment, the study indicated:(1)There was no significant effect of different fattening mode on musclephysical-chemical indexes of cashmere eliminate female goats, but muscle pH value,muscle color, marbling and cooked meat rate of house feeding female goats tended toincrease, and shear force, water loss rate tended to depress compared with grazing femalegoats.(2)There was no significant effect of different fattening mode on nutrient content ofmuscles of cashmere eliminate female goats, but house feeding female goats’ musclemoisture content of muscle moisture for tended to be was lower than grazing, and content of CP, fat, Ca and P was tended to be higher than those for grazing female goats.(3)Muscle pH24value, tenderness of cashmere eliminate female goats weresignificantly higher than those of lambs, and muscle water loss rate of female goats wassignificantly lower than lambs. No significant difference exited in meat color, marblingand cooked meat percentage between female goats and lambs, but meat color andmarbling of female goats had a tendency increased compared with lambs, and cookedmeat percentage had a decreased tendency than lambs.(4)Content of moisture, ash and phosphorus for cashmere lambs were significantlyhigher than female goats; fat and calcium contents were significantly lower than femalegoats.
