Pear is one of the three fruits in China, the annual production was13.67million tons in2009, about two-thirds of the world’s total output, with the first in the world. Pear fruits are rich in vitamins、sugars、minerals and other nutrients, and contain polyphenols、 flavonoids and other antioxidants, with healthy care function. In this experiment, we compared antioxidant content and the antioxidant capacity of the different stages, in order to provide the basis for development for pear fruit.In this experiment, with fruit of’Kisui’,’Lin Jin’,’Wanxiu’,’Jihshui’,’Aikansui’, the20th century’,’Zhonghuayuli’,’Zaosu’,’Chuannongbaozhu’ as the materials, study content of soluble solid content, titratable acidity, total phenolics, flavonoids and other antioxidant and antioxidant capacity of different parts of fruit.The results are as follows:(1) With fruit growth process, fruit soluble solids content of pear showed rising trend,’love sweet water’soluble solids reached a maximum of12%;(2) Pear fruit titratable acid content decreased, and there was significant difference between different varieties,’forest gold’ fruit titratable acid content was higher than other varieties, the highest reached0.66(3) Pear fruit is rich in total phenolics and flavonoids, and has strong antioxidant capacity, seed in the most, followed by peel, pulp;(4) The fruit antioxidant composition and antioxidant capacity of correlation analysis, total phenolic content and antioxidant capacity of positive correlation.
