Abstract/Summary:
Dorper and Mongolia crossbred sheep(a crossbreed between Dorper sheep and Mongolia sheep) were used in this study which fed in same condition. Slaughted in different weight effect on slaughter performance and meat quality (physicochemical indicators, nutrient composition, etc) were researched. The results are as follows:Carcass weight and meat weight in different experimental group showed significant difference (P<0.01);Several indicators(Slaughter rate,lean percentage, carcass production of meat rates,meat-bone ratio,ribeye area,GR value) were increased as weight rose; Slaughter rate in group â…£ and group â…¤ were significantly higher than group â…  and group â…¡ (P<0.05); Lean percentage and carcass production of meat rates and meat-bone ratio showed no significant difference between group IV and group V(P>0.05) while showd significant difference with group â… , group â…¡ and group â…¢(P<0.01).The physicochemical indicators in muscle showed that the meat color L*(lightness) value and b*(yellowness) value of â…£ and â…¤ group were significantly lower than other groups (P<0.05) while a*(redness) value was significantly higher than other groups (P<0.05). That is to say, the color of meat becomes deeper when weight growth higher. Department of water rate increased as weight growthed. Sensory evaluation of muscles show that the highest overall score of group â…£.Textural properties of muscles show that in range of the experimental group, the hardness of meat have no significant impact but the viscosity and chewiness are increased with weight.The nutrient composition(crude protein, heat) of muscle showed no significant difference in different group (p>0.05); Crude fat content increased when weight rose;Group â…£ and group â…¤ have significant difference with other groups (P<0.05)while no significant differences between group â…£ and â…¤.The results showed that group IV expressed good eating quality and significant heterosis, such as larger ribeye area, appropriate GR value, red color, higher intramuscular fat, juiciness, tenderness and so on. Slaughter performance and meat quality of45kg is the best group in Dorper and Mongolia crossbred sheep.
