The research was to study effects of dietary n-6/n-3on growth performance,carcass performance, meat quality and the concentration of LPL mRNA in Yangzhou Geese which were in different growth stage. Under the ratio of saturated fatty acid (SFA), mono-unsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA) was1:1:1, the dietary n-6/n-3was regulating by four ratio:3:1,6:1,9:1and12:1.To search a proper pattern of PUFA,we can provide basal information for Yangzhou Geese and provide a reference material for obtaining delicious meat.The different n-6/n-3PUFA was made by peanut oil, sunflower seeds oil,linseed oil,oleic acid and stearic acid. A total of160healthy Yangzhou geese (similar weight), aged3weeks, were randomly divided into4groups. One group was four repeat,one repeat is ten geese.They were fed on diets with n-6/n-3PUFA ratios of3:1,6:1,9:1, and12:1respectively. Basal diet was corn-soybean diet.The geese were slaughtered at42-day-old,56-day-old, and70-day-old respectively.1. The Yangzhou Geese’s daily weight gain and feed conversion had no significant effect with the different proportion of n-6/n-3PUFA ratio. And with the different proportion of n-6/n-3PUFA there were no significant effect on the Yangzhou Geese’s slaughter percentage, semi-eviscerated percentage, eviscerated percentage.The Yangzhou Geese’s slaughter percentage of different growth stage was all over80%.,so it could be said that Yangzhou Geese’s meat quality is well. The slaughter percentage of n-6/n-3PUFA ratio of9:1was very stable. The breast meat yield and leg muscle yield had significant effect with the different proportion of n-6/n-3PUFA ratio. The n-6/n-3PUFA of9:1had a high meat quality. 2. The different n-6/n-3PUFA was no significant on the tenderness, the water holding capacity of, the drip loss and the area of muscle fibre in the thigh muscle. There were significant effect on the pH value of thigh muscles and breast muscles, but it can’t effect the meat quality.3. The different n-6/n-3PUFA was significant on linoleic acid and linolenic acid of muscle. The fatty acids pattern of dietary could effect the fatty acids pattern of muscle, the different n-6/n-3PUFA had significant effect. on the contents of inosinic acid and AA. The n-6/n-3PUFA of9:1had the best taste of muscle at four ratios.the content of oleic acid was highest in the muscle.The contents of linoleic acid, palmitic acid,stearic acid, docosatetraenoic acid, linolenic acid and palmitoleic acid were more than1%.4. The contents of fat in muscle had releation with taste, tenderness of muscle, the different n-6/n-3PUFA was no significant on the contents of fat in muscle(the rate of fat in breast muscles and thigh muscles. the contents of fat in muscle was1%-3%,and it can say the Yangzhou Geese’s meat quality was delicious.The expression of LPL was different in different tissues..The expression of LPL was high in fat. The n-6/n-3PUFA of6:1had highest expression of LPL.Conclusion:The n-6/n-3PUFA of9:1made the meat delicious. The n-6/n-3PUFA of6:1had highest expression of LPL.
