In this paper, we took sweet persimmon produced in Baoshan, Yunnan Province and the Mopan persimmon produced in Jixian, Tianjin as experimental materials to study the effects of CO2treatment on the quality and shelf-life.The correlation of persimmon fruit quality and shelf-life, the effecting rule of fruit maturity, CO2processing time, shelf environment on the shelf life, and the effects of CO2on shelf life of two samples were discussed. The results showed that:The study on shelf-lives of persimmon fruits with different CO2treatment showed that: the relationship among persimmon’s ripening degree, soluble solids content and titratable acid content ratio presented a positive correlation. Persimmon fruit with lower ripening degree was more conductive to storage.The longer the CO2treatment was, the better the storage effects.after CO2treatment of0h、4h、6h、8、10h、12h, Shelf-life of persimmon fruit were6d、16d、20d、28d、36d、45d separately.Under different conditions, suitable temperature could elongate the shelf-life, Storing the fruit after CO2treatment under5℃、10℃、20℃、30℃, Shelf-life of persimmon fruit were11d、17d、15d、5d, separately, and under11℃, persimmon had the longest shelf-life. shape factors have a significant impact on Ambient temperature fluctuation, the larger the volume, the longer shelf-life would gain.The shelf life of persimmon fruit which stored in20℃thermostat cabinet for10h and12h separately could reach to shelf life of33d and37d, while the shelf life could reach to36d and45d if they were stored under20℃ambient condition.After comparison, the changing of hardness would significantly affect the shelf-life of "Baoshan" persimmon fruit. The changing of pectin content in fruit was the main indicator of fruit’s hardness.The treatment of CO2would rapidly decrease the hardness, pectin content, Vc, soluble tannin in Mopan persimmon fruit, and the corresponding shelf-life would be shortened as well.
