In recent years, the food safety problems have been found in our country,it make people feel serious. Some illegal traders add melamine that have high protein to dairy products. It will cause harm to human body, especially children. It can make them get urinary calculus. Foodcolourants is famous for its beauty in colour, it is frequently used.But amaranth and lemon yellow can lead to children’s intelligence drops, it can affect normal metabolism of the body,.So the usage of melamine,amaranth and lemon yellow is controlled in the food safety field.The research work of this thesis are as follows:1.This section describes the melamine response characteristics with the spectrophotom-etric indicator method, It study the best color conditions of melamine, best proportion relation of mixed indicator (methylene blue alizarin red)and the coloration mechanism of two aspects respectively.It also put forward a new method for visual colorimetry,it is the theory foundation of the development of melamine kit and melamine paper.2. The melamine is detected with cyclic voltammetryand it has redox characteristics, it provides the theoretical support for electrochemical detection of melamine.3.The molecular imprinting technique is used for the preparation of amaranth electrochemical sensors, it was prepared with functional monomer of oaminophenol and template of amaranth.The preparation conditions of the amaranth molecularly imprinted modified electrode is detailed discussed.Compared to the bare electrode, the sensor can greatly improve the sensitivity of amaranth detection.4. The differential pulse polarography is used for determining the amounts of lemon yellow. In pH6.00phosphat buffer solution, Lemon yellow have a reduction peaks at-0.59V. The calibration graph to determine lemon yellow is linear in the range from1.25×10-6mol/L to4.37x10-5mol/L, and the detection limit is5.00×10-7mol/L. The method is applied to determining two kinds of drinks with satisfied average recoveries from96.7to103.3%respectively.
