Vibrio parahaemolyticus is a Gram-negative, halophilic, asporogenous rod that can move in liquid culture, living in the sea water and seafood. Consumption of raw or undercooked seafood contaminated with V. parahaemolyticus can easily lead to foodborne illness. This bacterium is recognized as the leading cause of human gastroenteritis associated with seafood consumption in theUnited States and an important seafood-borne pathogen throughout the world. The high contamination probability has been confirmed in Chinese seafood, especially the ones from Zhejiang province.Bloody clam is the traditional shellfish product mainly cultivated by Zhejiang, Guangdong province. It is treated being a good choice for holidays by Ningbo residents because of its delicious taste and health caring. That V. parahaemolyticus will grow and breed along with the growing of bloody clams and the preference of undercooked bloody clams contribute too much to the probability of foodborne illness.This project investigated the occurrence and distribution of Vibrio parahaemolyticus in retail bloody clams, also evaluated the risk associated with bloody clams contaminated by Vibrio parahaemolyticus based on dietary survey using SPSS Statistics19and@Risk5.5.0. The main results are as follows:1. V. parahaemolyticus contamination rate of bloody clams is50%;2. Density of bloody clams contaminated by Vibrio parahaemolyticus lies between0.48log10(cfu/g) and3.04log10(cfu/g),3. Vibrio parahaemolyticus contamination density of bloody clams from shopping mall is higher than that from farmers market.4. The risk model predicted the risk of illness for each meal to be7.38×10-6, the spring and the winter is6.10×10-5and4.07×10-7respectively.5.Control of original contamination is the first important measure to decrease Vibrio parahaemolyticus food poisoning effectively. The risk control measures and dietary suggestions are also given:1.Taking some comprehensive publicity to keep the sensitive subpopulation away ASAP including babies, children, pregnant women, old men and the people with immunity defects;2.Cold-chain transportation of seafood should be built to decrease the initial contamination effectively;3.Enhancing the supervision and punishment to avoid illegal behavior;4.Educating consumers to learn to distinguish the fresh bloody clams, extend the cook time, avoid cross-infection.
