Hawthorn has the function of protecting stomach and improving digestion as a medicinal and edible material. The prescription which mainly contains the ingredient of astragalus has the obvious effects of anti-aging and immune adjustment. In order to develop the anti-aging health beverage compound of hawthorn and astragalus, this thesis used hawthorn and astragalus as the main raw material. Then optimized the extraction process of the efficacy component total flavonoids, the prescription of health beverage and the production technology. Finally the toxicological evaluation, functional evaluation and the stability of products was experimented.1. The single factor experiment and optimization experiment showed that the optimum technological condition of extracting the Chinese herbal medicine’flavonoids by water was that the ratio of solid to liquid was1:10, temperature was90℃, pH was5.0, extraction time was100min.2. Hawthorn and astragalus were the main raw material, then used sweeteners、β-cyclodextrin and flavor to blend, finally, the functional beverage could be made, which has good mouth feel、 rich nutrition and health protection function. When the extraction solution of hawthorn and astragalus was40%, sweeteners was7.5%, β-cyclodextrin was0.4%, and flavor was0.02%, the beverage had best flavor characteristic. When added0.06%xanthan gum,0.12%sodium carboxymethylcellulose,0.05%pectin and0.03%carrageenan, the beverage had best stability. When homogenization pressure was20Mpa, and homogenization temperature was between50℃and70℃, the homogenization effect was the best.3. The acute toxicity test, micronucleus test, sperm aberrance test and Ames test on mice showed that hawthorn and astragalus compound health beverage was safety and avirulent substance.4. When feed hawthorn and astragalus compound health beverage to mice by mouth, the specific activity of superoxide dismutase in mice was improved obviously, the content of muscle lipofuscin was decreased, and the life tests of drosophila melanogaster all were positive. The results of experiment showed that hawthorn and astragalus compound anti-aging health beverage had better effect on delay aging.5. The compound of hawthorn and astragalus anti-aging health beverage can obviously improve delayed allergic reaction, humoral immunity and phagocytic macrophage functions of in mice, so it has better effect on immunoregulation. 6. The stability test states that the quality of the compound of hawthorn and astragalus anti-aging health beverage is stable and dependable.
