| Through the different water content (13.5%,15.0%,17.0%) of958Zheng and theAgricultural University four corn, at different temperatures (natural temperature,18℃,25℃),different gases (air,40%CO2,98%N2) and under simulated storage established orthogonalto study the physiological process of corn in physiological quality, storage quality andnutritional quality variation, and regression data processing and analysis of variance. Theresults showed as followed:Physiological quality of maize is concerned, with the storage time, viability, germinationrate, catalase, color brightness (L*value) and yellow (b*values) was the trend of high to low,the trend of conductivity and color red (a*value) was from low to high; the effect of moisturecontent, storage gas composition, storage temperature and storage time of corn on thephysiological changes were very significant,which the moisture and storage time were moresignificant through standardized regression coefficients.In terms of storage quality of corn, with the storage time of controlled atmosphere, thefatty acid value, MDA, and the total number of fungal colonies were constantly on the overalltrend of high;the taste score value and the quality of corn bread was decreased continuously;the total number of bacterial colonies was first increased and then decreased; volatilecomponents in the atmosphere of corn aldehydes, ketones, ethers and other substances wereincreased. The effect of moisture content, storage gas composition, storage temperature andstorage time on the fatty acid value, MDA content, the total number of fungi and bacteriacolonies have a very significant effect; it can inhibit the reduction of maize storage qualitywhen using98%N2and40%CO2atmosphere storage campared to conventional gasstorage.Howere, the content of amylose, crude fat, alcohol soluble protein was less decreasingin13.5%moisture corn,especially in the controlled atmosphere storage; the nutritional qualityof high moisture corn decreased relatively fast,the higher the temperature,the decline wasserious.The storage technology of controlled atmosphere could delay the storage period of cornfor1year compared to general storage when the Water content was17.0%,15.0%and13.5%under25℃,respectivity. The use of controlled atmosphere storage, respectively, thanconventional storage can extend the corn in January about two months to three months, three months to May physiology, storage and nutrition indicators change. Meanwhile,98%N2and40%CO2atmosphere storage have a significant inhibition of maize physiological quality,storage quality and reduce the effect of nutritional quality than general storage,and98%N2atmosphere is better than40%CO2storage... |
