Fuzhuan brick-tea is a tea after fermentation, the microbes plays a vital role in the formation process of Fuzhuan brick-tea quality.In order to make full use of resources of microbial, improve the yield and quality of Fuzhuan brick-tea, this paper has made a systematic research in microbial diversity with different varieties and different process of Fuzhuan brick-tea. And we have improve the process of Fuzhuan brick-tea production from the view of fermentation. The main research results are as follows:1. Research of the dynamic change in Fuzhuan brick-tea process. Testing and statistical process of tea samples of different types and number of microorganism, found microbial growth has two peak:a ward of the period, the main for microzyme, aspergillus, the mold, root mildew; The second is the late hair flower, to crown axon were scattered bacteria (Eurotiμm.cristatμm)primarily, content to5.0by gasoloid density was exceed105CFU/g, accounting for more than90%of the total amount of microorganisms.2. Research of the advantage of microorganisms in the different varities Fuzhuan brick-tea.
