Bread is staff of life. Quality safety of the vegetables is not only directly related to faculty and students’ physical health, but is also related to the faith degrees of product quality in the mind of the teaching staff. The main source of the vegetables is self-planted by college or bought from nearby markets. This paper is based on the vegetables of a college faculties’ consumption.The heavy metal pollution is one of the four chemical contaminations in agricultural products. Heavy metals are easy to be bioaccumulated through the food chain amplification and can not be eliminated by biodegradation. Heavy metal pollution is the main factor to affect the quality and safety of the vegetables. This project devotes heavy metal pollution sampling inspection to the college base and some surrounding markets of vegetables in2010-2012. The detected vegetables include spinach, rape, radish, cabbage, purple cabbage, eggplant, tomatoes, leeks, potatoes and so on.A series of national standards were used as detection methods, such as 《Determination of lead in food》(GB/T5009.12-2010)、《Determination of total arsenic in food》(GB/T5009.11-2003)、《Determination of total mercury and organic mercury in food》(GB/T5009.17-2003)、《Determination of cadmium in food》(GB/T5009.15-2003) and 《Determination of copper in food》(GB/T5009.13-2003). The detection results of heavy metal were accorded the limited quantity standard of heavy metals in 《Health standards of the vegetable food of the People’s Republic of China》. By monitoring heavy metal pollution in vegetables of the college canteen, we not only determined the content of Cu, Pb, Hg, Cd and As in the vegetable samples, but analyzed and evaluated heavy metal contamination of vegetables. We tentatively discussed the vegetable quality and safety. The main conclusions are as follows:1. Between2010and2012, content of heavy metals in vegetables which are planted by college base was qualified basically, the result shown that just one kind of vegetable and two kinds of heavy metals were beyond the standard slightly among the ten varieties of vegetables and five kinds of heavy metals. The five kinds of heavy metal pollution in vegetables of surrounding market were more serious than vegetables of vegetable base, especially nine varieties of vegetables were polluted by lead. It could be seen that the situation of lead pollution was more prominent, second is mercury, and moreover is copper.2. By comparison of test data it is very obvious that school vegetables excels in terms of quality and safety, which is closely linked with the base of the natural background and rational, scientific fertilization, and prescribing medication.3. In order to control heavy metal pollution of vegetables effectively, to raise the level of vegetable safety and quality overall, beneficial to physical and mental health of consumers, increase the credit of the vegetables in the minds of consumers, and to consider of the quality and safety problems in food and vegetables of teachers and staff in our school, we recommended the following four areas which need improved and enhanced:(1) continuing to improve large-scale construction,(2) using of fertilizers, pesticides rationally,(3) enhancing farmland ecological and environmental protection,(4) strengthening the agricultural law enforcement and improving vegetable quality monitoring systems,(5) building vegetables brand effectively.
