Alcohol use is very extensive. It is the world’s largest production of fermentationindustry, and it is also a very important clean energy, it is extensively applied in thefood, chemical and other industries. The current domestic energy supply is very tight,oil is not a renewable resource has been unable to meet the national energy strategyand security requirements, so the study of new energy to replace oil has beenimminent. Alcohol fermentation is a renewable energy source, its developmentperspective is very huge.Cassava is a high-yield, high starch content of crops, it is the processing of starchand alcohol are widely used in the production of raw materials, the development ofcassava-based fuel ethanol can alleviate the problem of energy crisis. At present, thecassava ethanol fermentation process research and application of a certain degree ofprogress.In this thesis, the alcoholic fermentation of cassava were investigated: First of all,we do the experiments by adding the waste liquor of glucoamylase and the waste liquorof amylases for alcohol production process of cassava. The research results show thatadding the waste liquor enzyme not only saves the amount of amylase andglucoamylase, but also eliminates the addition of nutrients, and also increased the rateof the raw materials out of wine. After adding the waste liquor enzyme, we could saveamylase (20000u/mL)1320mL per and glucoamylase (100000u/mL)316.8mL one tonof alcohol, and save of1.76kg of urea,0.88kg of ammonium dihydrogenphosphateand and0.33kg of magnesium sulfate, the rate of the raw materials out ofwine increased0.64%.On the other hand, the fermentation conditions were discussed, includingliquefying time and saccharification time to explore, and finally we get the bestconditions of cassava materials ethanol fermentation. When the liquefactiontemperature is95℃, and the liquefaction time is70min; when the saccharificationtemperature is60℃, the saccharification time is40main; and the best time to fermentis72h, add15mL of liquid glucoamylase at the same time. After a series ofoptimization of conditions we got the maximum rate alcohol yieldf was54.01%,compared with the blank test increasing1.39%, the highest conversion rate of starchwas89.25%, compared with the blank test increasing2.32%.
