The α-amylases is also called " Liquefaction enzyme ", one of the common useenzyme in alcohol industry production.Alcohol production process: smash-cook-liquefaction-saccharify-fermentation.Recently, in order to simple the production process. The double enzyme method iscommon used for world wind industry factory. Liquefaction enzyme is one kinds ofendonucleases. It can randomly cutα-1,4glycosidic bond. But can’t hydrolysisα-1,6glycosidic bond. Generally, there are several factors with effect. Such as, time、temperature、PH、substrate/product concentration、metalion, ect. And the fermentationresidual total sugar、residual starch、the yield of alcohol will directly effected by theresult of liquefaction. So, to choose right liquefaction enzyme is the key point ofreduce production costs.This article is mainly about:1, laboratory stage comparative research of3kinds of liquefaction enzymes’sliquefaction result from liquefy viscosity、DE. This research also compare with theirreducing sugar、fermentation residual total sugar、GL to choose the right enzymeswith high conversion rate.2, put the enzymes with high conversion rate(enzyme activity mark260000u/mL)into daily production. Compare with their previous data, such as, saccharify DE、PH、yeast morphology、fermentation Residual total sugar、reducing sugar、GL、ect. to testliquefaction enzymes’s application and competitive advantage.
