Multi-touch technology is a novel human-computer interaction technology that can support one or more fingers of one or two hands simultaneously, breaking the limitations of a single touch in the past, allowing users to explore their potential abilities more naturally to coordinate both hands in complex tasks, and increasing the degrees of freedom of touch interaction and input bandwidth. Thus, the bimanual interaction on the touch screen has been proved as a valuable input form with a high-degree of freedom. However, there are still some drawbacks, such as the low touch accuracy and the high error rate, hand fatigue, the difficulties of gestures expansion and so on, which all limit the bimanual interaction on multi-touch environment in a certain way. These drawbacks are mainly to the natural defects of hand movement, the irrationality between hands input and software mapping, inconsistent gesture design standards and so on. In order to assist the understanding of the designers of interface and users for the bimanual interactive technology and theories, clearly, which are needed for the successful design of two-handed computer input techniques. Therefore, in this paper we investigated and reviewed the related bimanual interactive technology in multi-touch devices and theories for the deep level of understanding of human bimanual function, and also provide some theoretical guidance for the further improvement of interface design and interactive technology. Moreover, touch interfaces in the past are mostly designed based on single point touch, which only considered the needs of one-handed touch (refers to the dominant hand in most cases), and do not take the dominant hand and non-dominant hand both into account. With the emergence of multi-touch technology, designers need to consider the properties of human hands and the requirements for the different motor characteristics again. Then the research for the difference of motor mechanism between both hands will become more important. In this paper, we focus on the two-handed interactive task based on Steering Law, we made an experiment on tunnel through tasks with both hands and investigated the difference between the dominant hand and non-dominant hand, and based on the result of investigation we provided some suggestions and ideas for the design of two-handed touch interface, especially for the menu design and menu control techniques. Finally, the integration of different interactive techniques especially for the pen+touch interactive technology will become the new hot spot of the two-handed interactive technology. Moreover, the pen+touch interactive technology as a novel research area, there are many advantages and problems left for us to explore and resolve. In this paper, we discussed a preliminary investigation for pen+touch interactive technology, and build a low-cost framework for the further research and development of the pen+touch applications. This framework can be proved to be able to support the development of gestures and interaction scenarios based on pen+touch by examples.
