Anemia egg is a new type of nutrition egg, which is through continuous feed contains adult to the layer Anemia feed from eggs. Study has been done to test the mineral elements , carotene, protein, moisture, ash, fat and other nutrients in Anemia egg ,and the comparison of test results has been done with ordinary eggs. Through the detection of toxic and harmful substances of melamine, Sudan, Rhodamine, heavy metal content and the 4 common types of Fluoroquinolone antibiotics residues, the safety evaluation of Anemia egg has been done. The main results shows as follows:(1)The experimental results show that in egg weight, eggshell thickness and appearance the Anemia eggs are different from ordinary eggs. Especially the yolk of Anemia egg is red, significantly different from the yellow yolk of ordinary eggs. Detection result shows that the carotenoids content of Anemia egg is 6.6mg/kg, 3 times as many as that of 2.2mg/kg of ordinary eggs.(2)In the aspect of minerals and trace nutrient elements content, except Ca, Mn decreases slightly in Anemia eggs. Other minerals like Fe, Cu and Zn exc. all increases. Especially K, Se and Mg, increases more significantly.(3)Except water and ash content that has no significant differences between Anemia eggs and common eggs, all other nutrients are higher in Anemia eggs than those in ordinary eggs. Especially yolk / white ratio is significantly higher in Anemia egg than that of ordinary eggs. Fat content of Anemia egg is 2.09% higher than that of ordinary eggs.(4)In the aspect of protein content and amino acid composition, Anemia egg's protein content is 0.69% higher than that of common eggs, total amino acids is about 0.18% higher. From essential amino acid content of human body, except threonine in Anemia eggs, the remaining 6 kinds of amino acids the human body need are higher than those of ordinary eggs. In Anemia eggs, the total essential amino acids contents are 34.35%, while they are 33.57% in common eggs. Thus shows that the essential amino acid content in Anemia eggs are more than those in common eggs. Furthermore, it shows that the essential amino-acid component in Anemia eggs is more reasonable.(5) Sudan red , rhodamine , melamine residue and heavy metal contents of Anemia eggs are in the standard range. Fluoroquinolones antibiotics is not detected. It is shows that Anemia egg is a high protein, rich lipids, high nutrition and safety product.
