This article according to the fragrant pear juice enzymolysis technical study, has obtained the fragrant pear juice pectin enzymolysis best enzyme preparation, as well as the enzyme preparation amount used, the enzymolysis time, the temperature and the most suitable enzymolysis pH value, obtainling the best enzymolysis combination condition through the orthogonal test; Through ultra filters the experiment to obtain ultra filters the optimum parameter condition, mainly through controls ultra filters the temperature, the pressure and time, obtainling the maximum membrane flux; After pocket decolorization resin's screening, the static state adsorption test, the resin dynamics balancing test, the dynamic adsorptive capacity as well as the adsorption equilibrium experiment, screens the best decolorization resin, has obtained the good dynamic adsorption condition and the regeneration condition; Through ion exchange resin screening, the dynamic adsorption as well as the elution, the resin regeneration experiment, obtain the resin depickling the best technological parameter combination; Simultaneously carries on the resin series combination, obtains the colorless non-acid high fructose product.The main findings are as follows:(1)The results of the fragrant pear juice pectin enzymolysis experiment:The best enzyme preparation is Pectinex BE XXL, the enzyme preparation amount used is 120μL/100mL, the enzymolysis temperature 35℃-40℃, the reaction time 2 hours, the pH value is between 5-5.5.(2)The fragrant pear juice through Ultra filters the experimental study results showed:Service pressure in 0.3 MPa, optimum temperature 35℃-40℃. When insightful rate reduces to raw material maximum flux 40%, should stop ultra filtering, the clean regeneration selects pH=11 the NaOH solution and the few sodium hypochlorite solution circuit two times may duplicate uses.(3)The result of decolorization experiment: The fragrant pear juice's biggest absorption wave length is 550nm, the best polymeric adsorbent is the LSA-900C pocket polymeric adsorbent, the static percent of decolorization 80.37%, transmittance 95.3%.②The fragrant pear juice dynamic adsorption best speed of flow is 3.8mL/min, the temperature 40℃, 1mL the LSA-900C resin to the fragrant pear fruit juice's biggest adsorption process load is 114mL.③4% NaOH eluent consumption is:1mL adsorbs the saturated resin to consume 5.2mL, the elution regeneration speed of flow is 3.3 mL/min.(4)The results of resin depickling experiment showed that:①The best depickling resin is LX-200, obtains the best depickling condition for the fragrant pear juice's density is 11Brix, speed of flow 3.8mL/min, the temperature for 35℃.②The best eluent is 50% ethyl alcohol solution, the best eluting temperature 35℃, speed of flow 2mL/min, the elution number of times 3 times, the eluent and the resin proportions are 2:1.③The resin series column order for column A:(LSA-900C)+ column B(LX-100)+ column C(LX-200)+ column D (LX-400), the resin volume ratio is 3:3:6:1.
