As a substitute for NaNO, HbNO not only the remnant of NaNO2 was reduced in the meat product, but fully used to resources of animal poultry blood, promoting animal poultry blood the comprehendsive development and utilization. increase content of Fe, by doing so, meat product take on charming red and realize no nitric or low nitric as well. This subject mainly research on synthesis process of HbNO, several factors impacting the result were explored and the main ones were choosed to optimize parameters, and analysis, identification, also studied on nature and application. The major research content and data was as follows:The hemoglobin extracted from cattle blood was used as materical to prepare HbNO. For a study factors basis, orthogonal experiment was used for optimization of reaction conditions of pigment synthesis. To optimal combined, heat temperature was 90℃, heat time was 25min, pH was 6.2, NaNO2 was 1.0%. The biggest influence is heat temperature, secondly is heat time, NaNO2, pH. Synthetic products provide for dry in Vacuum freeze-drying machine, with spectrophotometer determination the structure.Study on illumination, temperature, metal ions, oxidant, reductant, pH and so on factors impace on HbNO stability. Experimental results show that illumination and oxidant have a certain influence on HbNO stability, after storage and the application process, note that closed preservation in brown bottle. Metal ions, in addition Ag+, Cu2+ to HbNO stability is larger influence, other metal ions little impact, avoiding with Ag+, Cu2+ contact. In HbNO storage and application process, temperature should be controlled in 80℃below, the suitable pH in 4-10. Ascorbic acid and potassium sorbet of HbNO stability without adverse effects, add some to stability is a small improvement in the production process. HbNO soluble in 0.1mol/LNaCO3, distilled water, anhydrous alcohol, 65% ethanol, methanol solution, dissolving rate varies slightly, belong to water soluble pigments. In practical applications, it can be directly with distilled water dissolution HbNO.HbNO applied to low enema products, as meat chromogenic reagent alternative sodium nitrite. First determine the HbNO, different ascorbic acid sodium,α-tocopherol additives, then compares the experiment on its senses, chromaticity, physical properties, microbial levels, TVB-N, TBA, sodium nitrite, Fe were determined. Result show that HbNO is 5.0g/kg, different ascorbic acid is 0.4g/kg,α-tocopherol is 0.2g/kg. In cutting and mixing, adding HbNO enema quality obviously superior to add sodium nitrite enema, in colour and luster, taste and flavor, the quality and structure are demonstrated good quality, reduce the sodium nitrite residuces, improves the safety of meat products, but also increase the iron content, prevent the occurrence of anemia.
