This paper makes a concrete analysis of the current situation of the chemistry course for cuisine specialty in Secondary vocational school through investigation and interview etc. It expounds the importance, necessity and urgency of the reform of the chemistry course in Secondary vocational school. Under the direction of modern education theories and using the experience of domestic and international vocational course reform for reference, the author ponders deeply over the structure theory and envisagement of the system of the chemistry course for cuisine specialty in Secondary vocational school. With the theory of complex course and the theory "wide basic knowledge, flexible patterns", which is be advocating in secondary vocational school, the author practices layered teaching according to the graduated tendency of students and raises the course designs of the basic chemistry, the cuisine basic chemistry and the comprehensive chemistry. The author suggests adopting the major, required, optional and some other course forms and chooses the corresponding teaching contents to satisfy the various students of different levels in order to reflect the theory of teaching students accordance with their aptitude.This paper raises the principle about how to choose the contents of the chemistry course in vocational school by analyzing current situation and studying the theories. With cuisine specialty as case, the author analyses the demand of chemical knowledge in cuisine specialty and discusses emphatically about the links between the courses of the vocational chemistry and the specialized chemistry and designs the teaching contents and demands of the basic chemistry, the cuisine basic chemistry and comprehensive chemistry. It gives the partial examples about the content choice and organization of chemistry course for cuisine specialty and analyses them .The author has a preliminary try about the designs and choice and gets better effect in the teaching practice.
