In recent years, many food security incidents have frequently appearing in newspapers, had aroused great attention. Food security problem relates to the major issues of international trade and human health, therefore, monitoring and control of food contaminants and harmful substances such as pesticide residueare imminent, and preparation of food reference materials is very important for food quaity control.For the past few years, the total amount of the first and secondary reference material in our country was growing continuously. At present, there were much research about contaminants reference materials in the environment, natural-ingredient and nutrient component reference materials in food. But in food security field, there was only a few report about reference materials research. Especially there was no report about reference materials of food contaminants and pesticide residue in botanical food.In this paper, represented by preparation of reference materials for Benzo(a)pyrene in pepper oil and Atrazine in cabbage juice, common processes and method of preparation of food reference materials was presented. And several data processing methods were compared for homogeneity test and stability test. Definition, resource, category and computing method of uncertainty was also presented detailedly.Benzo(a)pyrene and Atrazine was determined by GC-MS SIM as national standard method. Homogeneity test and stability test referenced "CNAS-GL03,Guidance on valuating the Homogeneity and Stability of Samples Used for Proficiency Testing ", homogeneity tested by F Test, while stability tested by t Test and straight line formula for kept under room condition and refrigerated condition.Final prepared reference materials for Benzo(a)pyrene in pepper oil and Atrazine in cabbage juice all passed homogeneity test and stability test, concentration of the sample was certified, and uncertainty was also calculated. All these were intended for use in the method validation and quality control for organic contaminants and pesticide residue in food.
