In recent years our country have made a considerable development in dairy industry, dairy consumption is growing rapidly, but consumer demand is still not enough. Eating habits of residents in our country result in the great lag in dairy consumption. This article analyses dairy consumption from the perspective of dairy consumer on the development of China's dairy industry , including dairy consumption, dairy consumption structure, consumer confidence on dairy products. And give some forward corresponding countermeasures and suggestions.This paper analyzes China's dairy industry and dairy consumption profiles, and uses comparison methods to compare our country's dairy consumption with the developed countries. At the same time, compares urban and rural dairy consumption with case studies of China's dairy consumption. In addition, pay attention to the study of the logical relationship between objects, using the method of citing the facts, drawing diagrams, in order to get a higher credible conclusion of the study.First of all, there is a rapid development in our country's dairy consumption, but compare with the average consumption level in the developed countries, the gap remains huge. The growth of dairy consumption, lead to the heavy dairy industry competition and merger activity, and enhance the vitality of China's dairy market; Secondly, China's dairy consumption of urban residents is much more than that of the rural residents, urban residents are the main groups in the total consumption of dairy products, occupying an important position. At present, because of the income level, consumption habits, and marketing aspect, it is difficult to start peasant consumption. In this paper, through the analysis of dairy consumption structure differences between urban and rural residents, and gradually come to the conclusions that rural market will give a huge market space for our dairy industry. Finally, based on the "San Lu milk powder incident" to analyze the influence of consumer confidence in the safety of dairy products, and research how it influences our dairy industry, including urban markets and rural markets. In the end, give some suggestions, for example, improve the quality of dairy products, and strengthen government supervision, and media positive propaganda, in order to enhance the dairy consumption.
