[Background] With the widespread use of food additives in the catering, From this creates more and more the food safety problems. Multi-stage stratified random sampling was used in this study. accordingly, to standard the use of food additives in the catering, consummate the supervising system of food additives is used to enhance the safety control in foods of our country. Because of the laws and regulations of our country is refer to catering incomplete, to investigate the current situation of food additives in the catering, is practical importance to study and research the standard of food hygienein catering.[Objective] This research investigated the current situation of the catering of typically region in our country. To realize current status of uses of food additives in catering, the purchase and supervisory of food additives, analyse the main hygienic problem in the procedure of using food additives, so as to provide scientific basis to formulate and revise the regulation and hygienic standard of food additives in the catering.[Methods] Multi-stage stratified random sampling was used in this study. A cross-sectional survey was carried out among 1440 caterings from 24 provinces and cities of China. Adopt field investigation and face to face inquisition to collect informations by training person, to fill in engineered questionnaire, get the message of food additives and other materials used as food additives, the purchase and supervisory of food additives in the catering. The recording and sorting of data, statistics analysis with software of Epi-Info 6.04 and SPSS 11.5.[Results]1. Food additives were used in food processing in 70.8% caterings of this investigation , or used fault grade of additives. 69.8% caterings among it used more than two kinds of additives.The major additives include of colorant, enzyme preparation, expanding, essence, acescence moderator et al, additives wide spread used in foods of repast.2. 91.3% of the additives in this investigation was addition to food and combination which had regulated in GB2760 "Hygienic standards for uses of food additives", 275 cases of them exceeded the scope of GB2760 "Hygienic standards for uses of food additives", the additives include of colorant(and combination), edulcorant, antiseptic.the caterings which exceeded the scope account to 53.7%. The exceeding used of additive presented significant deviation in different regions,types and quantificat grade of caterings.3. 138 cases of additives in 133 caterings were non-food grade additives. 13.0% of caterings that used additives applied fault grade of additives,3 of them used more than two kinds of fault grade additives. The used of fault grade additive presented significant deviation in different regions, scale ,types and quantificat grade of caterings4. 27 caterings is matters without approval or taboos of food, the additives include of colorant and coloring agent in chemical engineering, bromicum Kalium and borax. 2.6% of caterings that used additives applied illegal used of additives, 4 of them used more than two kinds of matters. The used of matters without approval or taboos presented significant deviation in different types and scale of caterings.5. 42.9% of caterings that used additives requested the identification of the additives when they make purchases. 15.2% equipped with weighing tools which used only for food additive, 6.0% of them had recording of the used of additive, 28.6% had fixed place to deposit the additive. The package and instruction in 43.5% of the food additives unsuited to the regulation.[Conclusions]1. The phenomenon that exceed of the volume of use and the scope of food additive regulated in GB2760 "Hygienic standards for uses of food additives" is generally in the catering, minority catering used non-food grade additives or matters without approval or taboos of food, which is the potential threat to the health of consumer. The question in purchases and management of food additive is relatively Severity.2. The countryside , the junction of city and countryside and medium and small sized catering, especially the fast food shop and snack bar had outstanding questions in the use, purchase and management of food additive.3. Narrower coverage and less force of punishiment for illegal uses of food additives in "Food Hygiene Law". GB2760 "Hygienic standards for uses of food additives" is incomplete applicable to the catering.4. We should improve system of laws and Standard of food additives As soon as possible.establish long-term supervision, make progress in training ,enhance cognition about food hygiene regulations and knowledge of the catering operator.
