The fingerprint of distilled spirits reflects its chemical composition and content disposition. It utilized homogenicity and stability to reflect the internal quality of the distilled spirits with complicated composition. It has lots of good characteristics, such as obvious character, strong specificity, good reproducibility, along with the convenient and fast manipulation. So the fingerprint is an ideal methode for analyzing multicriteria in distilled spirits.In this paper, by studing Kweichow moutai, the separation method and condition of gas chromatogram and its feasibility were determined. Good equipments precision, reliable empirical method, stable sample inner 24h were proved. All of these meet the technical standard of the fingerprint.We established many contrast fingerprints, such as low degree aroma QingJiu, WuXinXiJiu, high degree aroma QingJiu and so on. Its technical parameter and similarity were studied.The conclusion was that the quality of LuZhouLaoJiao and WuXinXiJiu was the most stable; Kweichow moutai was less than that of them; DongJiJiu of different years had a far different composition.With the fingerprint of distilled spirits, the technique parameter and similarity were studied. The conclusions were as follows:1. The moity of low aroma wine was the simplest. The quality difference of middle aroma wine was the smallest. The similarity of aroma wine with different semblance was tremendous.2. The moity of JiangXiang distilled spirits was complicated. Its similarity of composition was more than 75%. The distribution of each chromatographic peak relative area disperses significantly. Different JiangXiang distilled spirits had its own characteristic.3. The moity of DongJiu was complicated. The distribution of each chromatographic peak relative area disperses moderatelly.4. The moity of MiXiang distilled spirits was simple. Its similarity of composition was more than 90%. The distribution of each chromatographic peak relative area was concentrate. The less ageing years, the more concentrate the peak of relative area was.5. The moity of QingXiang distilled spirits was simple. Its similarity of composition was more than 60%. Distilled spirits within different regions had its own characteristic.6. The distilled spirits with different flavor has its chrateristic moity. The similarity between DongJiu and distilled spirits with all the other flavor is high . The similarity difference between aroma and JiangXiang is the most.
