Vitamin is an indispensable compound to maintain normal growth of organisms. Nutrient solution for animals is a new animal feed additive, which is containing vitamin and nutrient rich. It can enhance the immunity of animal organisms.The structure, physiological functions of vitamins in nutrient solution for animals and the impact on organism of vitamins' deficiencies and intake of excessive vitamins were introduced in the first part of this thesis. The progress of analytical methods of fat-soluble vitamin A, D, E and the progress of analytical methods of vitamins B were summarized in this thesis. In addition, the progresses of analytical methods of vitamin C and K3 by spectrophotometry were reviewed.The analytical methods of vitamins in nutrient solution for animals were established systematically in the second part of this paper. A method for the simultaneous determination of fat-soluble vitamin A, D3 and E in nutrient solution for animals by HPLC-diode-array detector was developed. A ZORBAX SB-C18 column (2.1 mm×150 mm. 5 μm) was selected as separation. The mobile phase was isopropanol-water (65:35) . The detection wavelength of vitamin A, D3 and E were at 325 nm, 265 nm and 290 nm, respectively. A reversed phase high performance liquid chromatographic method for the simultaneous determination of vitamins B in nutrient solution for animals was developed. An AichromBond-AQ C18 column (4.6 mm × 250 mm, 5 μm) was selected as separation. The mobile phase was methanol / potassium dihydrogen phosphate buffer. The detector was HPLC-diode-array detector and The detection wavelengths were at three wavelengths, respectively. In addition, the analytical methods of vitamin C and K3 by spectrophotometry were developed, respectively.Different objects chose different analytical methods. The methods were flexible and the results were satisfactory, which could control the quality of the products effectively.The technique of rapid testing pesticide residue in fruits and vegetables and the applications of ELISA in the field of food analysis were reviewed in the third part. A method for the determination of pesticide residues in vegetables and fruits by ELISA was developed. This method was very specific, with high anti-interfering ability. It was also highly sensitive,time-saving and easy to operate.
