The γ- aminobutyric acid is a water-soluble amino acids for protein, abundant in plants and animals, is important in the nervous system of higher animals pass inhibitory substances, have lower blood pressure, anti-atherosclerosis, slow memory loss, while participating in the multi-species metabolism activity, with high physiological characteristics.The Experimental Study of brown rice as raw material, the slow variable temperature treatment germinated brown rice and brown rice to brown rice germination thermostat germination rate and γ- aminobutyric acid change, γ-aminobutyric acid extracted by ultrasonic assisted sulfosalicylic acid method, then 732 cation exchange resin with γ- aminobutyric acid were purified and studied antioxidant brown rice after germination: The main findings are as follows:(1) After screening, cleaning, disinfecting, soaking, slow germination treatment temperature change get germinated brown rice, discusses soak temperature, soak time and slow variable temperature germination treatments on three factors on brown rice germination and γ- aminobutyric acid content in the three on the basis of factors, optimized by orthogonal experimental design to get the best germination conditions are: soaking temperature is 25 ℃, soaking time 25 h, slow germination treatment variable temperature is 5 ℃treatment 10 h + 30 ℃treatment 14 h, in this condition germination rate was 97.7%, γ- aminobutyric acid content of 26.41(mg / g).(2) In univariate basis germinated brown rice with γ- aminobutyric acid extraction rate of response using Box-Behnken response surface optimization of experimental design to establish a quadratic regression model to obtain ultrasonic extraction γ- aminobutyric acid germinated brown rice optimum conditions: ultrasonic power is 245 W, ultrasonic temperature was 51 ℃, extraction time 15 min, under the condition γ- aminobutyric acid extraction rate of 0.765%.(3) After screening 732 cation exchange resin is determined on γ- aminobutyric acid were optimized by experimental verification to determine the optimum purification condition γ- aminobutyric acid as the sample concentration of 5mg / ml, the sample flow rate of 1ml / min, sulfosalicylamide acid concentration of 3% was eluted eluate, after purification γ- aminobutyric acid purity of 76.2%.(4) Germinated brown rice by sulfosalicylic acid extracts studied germinated brown rice than unmalted scavenge hydroxyl radicals and superoxide anion effect is good, when the end of the reaction, not germinated brown rice clearance rate decreased rapidly to 20%, while the germination after the rice has more than 30%, the oxidation resistance of germinated brown rice after more funny and more lasting.
