Case Study Of AB Factory On Food Safety Management And Incident Management

Food industry has been the biggest industry in Chinese national economy. In resent years, there were many food safety incidents happened, which influenced the Chinese products exportation, even brought negative image for China. In 2008, Melamine issue had such a big effect that nearly destroyed the domestic dairy industry, and led the Chinese dairy giant"San Lu"closed down. Food safety is the most important element for food industry, which relates the consumer's health and life, impacts the society's harmony, stability and the healthy development of society. It is the key action for food safety assurance that establishing the food safety management system in foods manufacturing and having them executed. There should be emergency plan for food safety incidents to avoid crisis. The objective of crisis management is to prevent the incidents or crisis, as well as preparing back up plan. The incident handling should follow the way of being transparent, credible and veridical.This article chooses a case of the food safety incidents happened in AB factory and shows the examples of the factory operation, the process of the incidents and crisis management; investigates the status quo of AB factory's food safety management and the gaps on incident preventive management; analyzes the main causes of the incident and the risk assessment; provides some improve actions on food safety system training and control. It is the purpose to inspire food manufacturers improving food safety management so as to reduce the food safety risks, properly handle the incidents to delight consumers. The research is mainly based on documents study and case study. Documents study lists the concept of food safety, the start and development of food safety management system, the application of incident and crisis management, the influence of food safety for future. Case study analyzes the AB factory's practice, to support the documents study, and try to integrate the manufacturer's food safety management system.The conclusion from the case study is: Food safety incident is unavoidable. Better food safety management system can reduce the safety issues. However, the risk is always there; Food safety incident can be reduced through proper food safety management system; Food safety does not achieved by testing, but by producing and managing; Consumer is the priority in the incidents and crisis management; Consumer's trust is the fundament of the business. How to manage the incident and crisis can affect consumer's trust.
