Along with the civil aviation market gradually opening, the domestic private airlines and the overseas low-cost airlines enter one after another, the competition intensifies day by day. In order to obtain the development, each airline diligently excavates and promotes its core competitive ability. As the attachment of the airlines, the in-flight catering industry faces the same problem. With the rapid development of economy, the people's living standard is improved and the life habit is changed. Food is not only for the full belly, but also a kind of enjoyment. Therefore, the in-flight food should be provided with quality, nutrition, esthetic sense, security and individuality. The traditional production & operation management system can't meet the needs of these changes. Choosing an effective production & operation system has always been the main topic of the in-flight catering industry research and exploration.This article takes the Xiamen airlines catering department as an example. Firstly, it introduces the catering department's production & operation management system, point out the existent problems and analyze its reasons. Next, it gives the comments on how to improve from the design and control.The competition is intensive day by day , the civil aviation is still a sunrise industry and has a promising future. The author hopes the catering department could hold the opportunity, deepen the reform and continue the improvement so that it can increase the passengers'satisfaction to food and enhance the food competition superiority. It's our goal to make Xiamen airlines develop stronger and stronger.
