This experiment is mainly about the processing technology ofhulless barley and the content of β-glucan in by-product, and drawing the Process diagram about how to process the rice. By selecting different gradient of water content (3%,4%,5%,6%,7%) on tempering, and Skinning rice. The experimental results show that when rice Skinning, both of the two kinds of hullessbarleies’soptimum water are5%. Because if add too little water will lead to inadequate Skinning, and add too much water will Skinning too much which will mix materials in the aleurone layer with bran. Two kinds of hullessbarleies have the same Skinning number-4, it can not only ensure Skinning out more bran in hulless barley, but also can prevent excessive Skinning, avoid the run out of things mixed with the materials such as starch and protein in the aleurone layer. Finally considering factors such as energy consumption, equipment, funds, human resources, combined with the sensory evaluation of highland barley meters, and the best technology of Skinninghullessbarleies:add water5%, fourSkinning.Detection in the process of the system of rice under different grinding way for the content of the by-products from processing of β-glucan,The experimental results are as follows:Determinating theβ-glucan content in different bran, the results show that the content showed a trend of declining after increasing first, the turning point for the fourth Skinning, and the brancontents the highestβ-glucan. According to the content of β-glucan distribution can be obtained, hulless barley aleurone layer of β-glucan distribution in the cell wall has the certain regularity, from outside to inside showed a trend of declining after increasing first. Precision accuracy test and the test results show that the determination of Congo red P-glucan RSD was5.291%, shows that this method detection repeatability and high precision. Average sample recovery rate was99.88%, the accuracy of β-glucan measurement show that the method is higher, can meet the needs of the experiment.
