This paper anthocyanins is extracted from blueberry pomace, and obtained blueberry anthocyanins with high purity by extraction and purification.Then, anthocyanins are structured identification and study the stability and antioxidant activity.The contents and resultsare as follows.1Anthocyanins are extract by solvent from two kinds of blueberry rosacea as wild and cultivated.Under the optimal extraction parameters,the content of anthocyanin is3.03mg/g,the content of total phenols is4.52mg/g, the content of total flavonoids is1.85mg/g,the yield of crude extract is22.1%, the purity ofanthocyanins is1.37%in wild blueberry rosacea; the content of anthocyanin is2.12mg/g,the content of total phenols is3.34mg/g,the content of total flavonoids is1.37mg/g,the yield of crude extract is17.6%, the purity of anthocyanins is0.89%in planting blueberry rosacea. The results showed that theanthocyanins, total phenolics and flavonoids of wild blueberry wine dregs were higher than the planting.Blueberries rosacea anthocyanins contain five kinds of monomers,which are peonidin-3-galactoside,delphinidin-3-galactoside,petunidin-3-galactoside,malvidin-3-glucoside,malvidin-3-(6′acety) glucoside2. The anthocyanins obtained by solvent extraction have many impurities, and need to bepurified. Through the study of adsorption and desorption of five kinds of macroporous resin ofstatic, found effect of overall adsorption and desorption of NKA-II is better, and it is an highlydesirable resin. NKA-II static adsorption and desorption conditions were: the concentration ofcrude extract is0.8mg/mL; pH adjusted to3; the sample flow rate is1mL/min;flow rate ofelution is1.0mL/min,and the eluent is40%ethanol solution of5column volumes. Afterpurification, blueberry anthocyanins products is purple powder, its color price of90.57andpurity of27.6%.3. The results of stability studies of purified product of blueberry rosacea anthocyaninsshow that: Blueberry rosacea anthocyanins is relatively stable at pH less than3.0,and the stabilityof anthocyanins reduce with the pH rises,and sensitive to light and heat for a short time.Potassium sorbate on the stability of anthocyanins have a good effect, and ascorbic acid willdestroy the stability of anthocyanins. K+ã€Mg2+ã€Ca2+ã€Cu2+ã€Al3+had no significant effect on thestability of anthocyanins, which Mg2+ã€Ca2+ã€Cu2+ã€Al3+has the role of; enriched; Na+ã€Zn2+ã€Mn2+to increase the anthocyanin stability, and there is enriched effect; Pb2+ã€Fe2+ã€Fe3+would seriously reduce the stability of anthocyani, Pb2+and Fe3+make blueberry anthocyanins solution toproduce white precipitate.4. The study is the antioxidant activity of purified material and crude extracts of blueberryanthocyanins were analyzed. Blueberry rosacea anthocyanins can scavenge hydroxyl radical,DPPH radicals and superoxide anion radical, and have a certain total antioxidant capacity.
