Taking Mesona Blume as the main material,the experiment developed a kind of Mesona Blume powder for clarify beverage based on the analysis of its main ingredients.The processing technology of the product has been determined,including extraction,clarification,concentration and drying.The application and the storage of the powder have been stud ied. Through discussing the change rule of main quality during the storage of Mesona Blume powder, established the storage life estimation model.Through comparing hot water extraction and ultrasonic-assisted extraction,with the flavonoid yield and the soluble solid content as indexes,results indicated that using hot water extraction is more reasonable.The optimum extraction condition:liquid material ratio is1:50, extraction time120min, extraction temperature85℃.Through studying enzymatic clarification and chitosan assisted method,compound pectinase was finally chosen.The optimum conditions for compound pectinase and chitosan:dosage of compound pectinase2.17%,treatment pH4.2,treatment tempeature55℃,treatment time90min;dosage of chitosan0.09g/L,treatment tempeature41℃.treatment time30min.Using vacuum concentration,the concentration multiple is7,it costs30min under70℃.The concentration endpoint:the soluble solid content of the Mesona Blume concentrate is9.8%.Through comparing freeze drying and spray drying,determined spray method for Mesona Blume powder drying,and chose maltodextrin as drying aid.The optimum condition:inlet temperature200℃,rate of feed10mL/min, total soluble solid content13%.Through studying the influence of light,heat and pH to flavone in Mesona Blume powder,the results indicate that heat and pH have major impact,light has less affect,but long time illumination urges the flavone decrease.Using Mesona Blume powder to deploy beverage,the clarity can meet the requirment,and the sensory quality is better when the dosage of Mesona Blume powder is0.6%.Taking colour as index,studied the change rule of main quality during the storage of Mesona Blume powder,and the prediction model of she If-life was established.This article also designed the production line of Mesona Blume powder,and drawed process flow chart and the workshop plan.
