Blueberry is Ericaceae Vaccinium genus,our country have a rich blueberryresources.The research shows that blueberry anthocyanins substances exist in peeland anthocyanins substances have a wide range of physiological functions andmedicinal function such as eliminate eye fatigue,protect eyesight,anti-oxidation,anti-aging,anti-ulcer,anti-inflammatory,anti-cancer and so on.In this paper,the blueberry frozen fruit peel as a raw material, it systematically studiedanthocyanins extraction and purification process and stable performance,it is veryimportant to development and use the blueberry resources.This paper systematically anthocyanin extraction process;macro porous resinpurification methods; compare silica gel thin layer chromatography and highperformance liquid chromatography separation of anthocyanins, liquidchromatography-mass spectrometry to conduct a preliminary analysis ofanthocyanin component;study the stability of blueberry skin anthocyanins.Themain conclusions are as follows:1.The optimal conditions of extraction blueberry skin anthocyanins were asfollows:volume fraction of40%acidic ethanol(pH value2.0),extraction time60min,liquid ratio10mg:10mL,extraction temperature50℃,the anthocyanincontent of7.5660mg/g peel.2.The conditions of static absorption and desorption by AB-8macro porousresin were that adsorption equilibrium time was4h;desorption equilibrium timewas1h,anthocyanin solution pH was2.0;macroporous resin to its adsorptioncapacity relatively strong;volume fraction of40%ethanol solution(pH2.0)as theeluent.The conditions of dynamic absorption and desorption were that sample flowrate and desorption flow rate were1.0mL/min,sample volume of220mL,150mLvolume fraction of40%acidic ethanol as eluent.After AB-8macro porous resinpurified,the color price of blueberry skin anthocyanins was52.10.Silica-gel plateas chromatography media,water-ethanol-n-butanol-ethyl acetate (11:9:25:36) andn-butanol-acetic acid-water (4:1:5) as developing solvent separation effect arebetter. Blueberry skins was found to contain12anthocyanins by liquidchromatography-mass spectrometry.3.The blueberry skin anthocyanin was stable below60℃,and more sensitiveto light;anthocyanin more stable under the conditions of the pH value of less than 5.0;the oxidation and reduction resistance of the anthocyanins were relativelypoor;glucose has hyperchromic effect;potassium sorbate protect the color andincrease stability of anthocyanin; Na+has hyperchromic role, and the highconcentration of Na+to increase the stability of anthocyanins;Ca2+,Mg2+,Zn2+hashyperchromic role,and nor significantly effect on color glycosides stability;Al3+hashyperchromic role, and low concentrations of Al3+on the stability ofanthocyanins had no significant effect;K+cannot increase the absorbance value andno significant impact on the stability of the anthocyanin;Cu2+,Fe3+no obvioushyperchromic role,and have undermine the role to anthocyanins....
