Maltose is a reducing disaccharide, a new type sweetener and sugar replacer. It can be applied in medical and food for its unique function in human body. The production of maltose in china usually use plant enzyme and the purification technology is complicated. This paper is to find one strain that can degrade short-chain polysaccharide in maltodextrin to produce pure maltose.In dealt with maltodextrin, alcohol precipitation can lower the effect by the long-chain polysaccharide which contained in maltodextrin. The TLC was used for the product analysis of the broth and the enzymatic hydrolysate. The results showed that4C1strain is the better for the purification of maltose from maltose dextrin.According the enzymatic product analysis, the optimum fermentation conditions of the4C1strain are determined. The best nitrogen source for growing is peptone and the optimum concentration is0.3%. The result showed that the optimum culture temperature is30℃and pH is7.0with0.5%inorganic salt broth, Culture for24h in shaking table and the rotational speed is140-160rpm.The bacterium have different ability and approach in the process of maltodextrin’s biodegradation, through the further study for the concentration of carbon source, the strain L1and4C1also have the ability of degrade the short-chain polysaccharide at high concentration.
