The study used pollution-free lettuces are used as raw materials by Nanping Xiangtong ecological agriculture company.By means of the physiological changes from the origin of precooling.And set a cold chain circulation system of fresh-cut Lactuca sativa L.from field pre-cooling, fresh cut processing, packing material cold-chain logistics and et al.In the study, explored effect of fresh-cut Lactuca sativa L. under different precooling mode,used natural preservative to protection what fresh-cut Lactuca sativa L. browning and select the best packing material for fresh-cut Lactuca sativa L..1. Spray, soak and pressurized spray were used to water conservation of Lactuca sativa L.. The result showed that Lactuca sativa L. soaked in water could retention of water of Lactuca sativa L. in vacuum pre-cooling.And the best quality of Lactuca sativa L. what in temperature1±1℃of vacuum pre-cooling.2.1n order to prevent browning of fresh-cut Lactuca sativa L., make compounding preservative from raw ginger,garlic extract and Chitosan solution. According to the physiological changes of fresh-cut Lactuca sativa L, they were studied to discover the best formula. The best formula the best formula were as follows:raw ginger concentration10.0%, garlic extract concentration2.0%and Chitosan solution concentration2.0%.This ormula could keep ten days be good quality of fresh-cut Lactuca sativa L..3.0.03mm PE plastic film bag is the best what to keep the quality of fresh-cut Lactuca sativa L..The0.03mm PE plastic film bag could effectively reduce the decline of Soluble sugar content and the rate of weight loss of fresh-cut Lactuca sativa L., prevent browning, maintain the low level of MDA content.4. Elaborating the main technical points to cold chain circulation of fresh-cut Lactuca sativa L.
