Advanced glycation end products (AGEs) are a group of compounds, which are formedby Maillard reaction or lipid oxidation during food processing or storage. AGEs are regardedas a kind of uremic toxins, which is associated with diabetes complications. Currently, effectsof synthetic AGEs on kidney cells or organisms are main research fields. Reports about effectof dietary AGEs on renal are fewer. In this experiment, we used healthy rats and diabetic ratsas test models, by feeding different levels of dietary AGEs, we detected effects of dietaryAGEs on rat renal. The degree of oxidative stress in the kidney were estimated, exploring thepossible mechanism of renal injury. Simultaneously, distribution of AGEs in various organsfor diabetes and healthy rats were analysed, for better assessment the risk of AGEs. Theconclusions were as follows:(1) Dry heat cooking at high temperature promoted the formation of dietary AGEs,compared to the N-AGEs chow, the content of CML was2.7-fold elevated in the H-AGEs diet.Fluorescent AGE content elevated4fold.(2) Along with time, excessive dietary AGEs accumulated in the serum and kidney ofhealthy rats, and the content of serum AGEs and kidney AGEs increased along withconcentration of dietary AGEs. Excessive intake of AGEs caused kidney damage in healthyrats, activating the kidneys oxidative stress.(3) Dietary AGEs can accumulate in the serum and kidneys of diabetic rats, formation ofAGEs by hyperglycemia increased, and decreased removal of AGEs resulting from renalfunction lesion resulted accumulation of AGEs in diabetic rats.(4) Kidneys are vital organs in accumulating and removing of dietary AGEs. AGEscontent in health rats and diabetic rats from high to low were: kidney> liver> heart> lung>spleen, along with time, the amount of AGEs accumulating in various organs increased, andcontinued to rise with elevated absorption of dietary AGEs. Fluorescent AGEs and CML indiabetic rats organs were higher than healthy rats.(5) AGEs induced dyslipidemia in diabetic rats and healthy rats, the contents of serumtotal cholesterol, triglyceride and low density lipoprotein rised along with absorption of dietary AGEs. The contents of total cholesterol, triglyceride and low density lipoprotein indiabetic rats were higher than healthy rats. The content of high-density lipoprotein decreasedwith absorption of dietary AGEs.
